Our family really enjoys eating this easy smoked sausage recipe for dinner!  The men especially love the smoked sausage and potato dish.

Smoked Sausage Hashbrown Casserole Recipe

My husband LOVES smoked sausage with a hearty serving of hashbrowns.  One of our family’s favorite casseroles is our Farmhouse Cheesy Potatoes.  We were looking for new dinner ideas and adding smoked sausage to a classic just made sense. 

The result is this super cheesy and super delicious Smoked Sausage and Cheesy Potato Casserole!

Hashbrowns are our favorite type of frozen potato to use in a casserole. They cook faster and blend well with the other creamy ingredients for maximum flavor in every bite.

Smoked Sausage or Kielbasa and Sauerkraut are some of our favorite recipes.  The traditional mix of Sausage, Potatoes & Green Beans in the Instant Pot and the similar Sausage, Sweet Potatoes, and Green Beans are also regulars in our meal rotation.

Cheesy Potato and Smoked Sausage Hashbrown Casserole is unlike any of our other dinner recipes with sausage because of all of the cheese.  It’s the kind of meal that you crave.  We always serve with a salad or another green vegetable like Air Fryer Roasted Broccoli to give balance to the meal.

If you have a lot of smoked sausages some extra coins or slices can be mixed into this Sausage Fried Rice for another delicious meal!

Smoked Sausage Casserole

I’ve made this recipe a couple of times already and think it’s funny that my dad and husband both strongly prefer the sausage on top.  I have a hunch they want to see the meat in the meal.  In my opinion, stirring the sausage into the casserole tastes the same as spreading it out on top.

Mix sour cream, shredded cheddar cheese, cream of mushroom soup and frozen hash browns together and bake for about 30 minutes.  Add some more cheese and smoked sausage for another 15 – 20 minutes and dinner is ready!

Check the label to be sure, but know that most smoked sausage is pre-cooked so it only needs to be heated.  The cheesy potatoes take about an hour to bake.  Sausage will burn sitting on top of the casserole for an hour, so I like to add the top sausage layer with about 15 go 20 minutes to go in the baking time.

Tips for Success

  • Make sure frozen shredded hash browns separate easily, frozen clumps will take longer to bake, so I use a butter knife to break up if necessary
  • Use a large bowl to mix the ingredients in, mixing these ingredients takes a lot of space
  • Recipe can easily be divided in half by using a smaller pan or decreasing baking time in the same size pan
  • Extra cubed cheese can be used in place of shredded if you have extra from a cheese tray or party
  • Sausage can be sliced however you like
  • Casserole makes great freezer meals and reheats well for quick lunches throughout the week

How to Make Smoked Sausage and Potato Casserole

  1. Pour hashbrowns into a large mixing bowl
  2. Spread sour cream and cream of mushroom soup over hashbrowns
  3. Season with salt and pepper by sprinkling over the top.  Stir well.
  4. Add 2 cups of cheddar cheese and stir well.
  5. Spread in the bottom of greased 9 x 13 baking pan
  6. Bake for 35 minutes at 350ºF
  7. Add remaining cup of cheddar cheese and sliced smoked sausage
  8. Bake for an additional 15 to 20 minutes until the casserole is heated through and all of the cheese is melted well.

Storage and Handling

Allow leftover to cool and then put into containers with individual servings. We like to use an air tight container or store tightly covered in the refrigerator for 3 to 5 days.

The casserole can be frozen before or after baking by wrapping with plastic wrap and then adding another layer of foil. Store in the freezer for up to 3 months.

Allow the casserole to defrost in the refrigerator for 24 hours before removing the plastic wrap and baking or reheating.

Leftover reheat and taste wonderful. Serve warm and enjoy!

Ingredients
  

  • 1 package shredded hash browns 26 ounce bag
  • 1 cup sour cream
  • 10.5 ounce cream of mushroom soup
  • 3 cups shredded cheddar cheese divided
  • 1/2 teaspoon pepper
  • 1 teaspoon salt optional
  • 1 pound smoked sausage sliced

Instructions

  • Pour hashbrowns into a large mixing bowl.
    1 package shredded hash browns
  • Spread sour cream and cream of mushroom soup over hashbrowns. Season with salt and pepper by sprinkling over the top.  Stir well.
    1 cup sour cream, 10.5 ounce cream of mushroom soup, 1/2 teaspoon pepper, 1 teaspoon salt
  • Add 2 cups of cheddar cheese and stir well.
    3 cups shredded cheddar cheese
  • Spread in the bottom of a lightly greased 9 x 13 baking pan. Bake for 35 minutes at 350ºF
  • Add remaining cup of cheddar cheese and sliced smoked sausage. Bake for an additional 15 to 20 minutes until the casserole is heated through and all of the cheese is melted well.

    I have no idea how this dish received 5 stars consistently. It was horrible! I followed the directions perfectly and it was not good. It should have been good and you really can’t go wrong with these ingredients. I will not be making this again.

    Can I use Velveeta 2% cheese instead of Cheddar Cheese and Turkey Kielbasa to make this dish.
    I am not a fan of Cheddar and I don’t eat pork because it makes my blood pressure go sky high.

    1. Hey There – Turkey Kielbasa should work well. I haven’t tested this recipe with Velveeta, but think I would stir a couple times to help the cheese melt and distribute evenly. If you give it a try please let us know how it goes. Hope you enjoy!

      I serve it with nothing it’s a whole meal alone . Sooooo good . I use fries sliced turkey sausage, a block of cream chz and cayenne pepper . My husband likes Bob Evans hot sausage so I probably got all the top crumble and added on top of his

    I just made this to freeze for a postpartum meal, but I had to sneak a bite. It was phenomenal. I added sautéed onions and celery to sneak a little more veg in for my toddler. Thank you for the recipe!

    Delicious! Followed the recipe but tweaked it a little. I added two diced jalapeños, half a can of diced mushrooms an extra shredded cheese. I also used deer smoked sausage.
    I’ll definitely make this again!
