Chicken Noodle Casserole

A simple meal with noodles, cream of chicken soup and chicken topped with cheddar cheese creates this Chicken Noodle Casserole.

Mellow flavors blend nicely to create one of those solid family meals that we crave.

Creamy chicken and noodles mixed together in a delicious casserole and coated with a layer of cheese.

Easy Chicken and Noodle Casserole Recipe

Not fancy, not fussy, just easy to make leftover chicken or turkey, canned chicken, frozen chopped chicken or a rotisserie bird provide the base of this casserole.

Similar to our Hamburger Noodle Casserole, cook some egg noodles and mix with cream of chicken soup flavored with a sautéed onion and melt your favorite cheese on top. We typically bake in the oven, but the dish can be finished in a deep skillet on the stove top.

Serve with frozen carrots and peas, a Baked Vegetable Medley or simple Chop Salad with this casserole for a complete meal.

Ingredients Needed

  • Chicken – cooked chicken or turkey that’s shredded or chopped
  • Egg Noodles – we like the wide (not extra wide) egg noodles. Use half of a bag or 8 ounces of uncooked noodles to make 4 cups of cooked noodles.
  • Cream of Chicken Soup – our favorite option, but cream of onion can be used and the onion can be omitted.
  • Butter – adds a deeper flavor to the onions and entire casserole.
  • Onion – I like sweet, yellow, or white onion to chop. 2 tablespoons of granulated onion can be substituted.
  • Milk – helps thin the condensed soup slightly, but not too much.
  • Cheddar Cheese – Colby, cheddar jack, anything with some yellow cheese works well.
  • Salt & Pepper – season to taste.
Ingredients to make a chicken noodle casserole are egg noodles, cream of chicken soup, butter, milk, onion, cheddar cheese and cooked chicken on a wooden counter top.

Step By Step Instructions

Chop cooked chicken or drain and fluff canned chicken with a fork. Set aside.

Start with 8 ounces of dry noodles (typically half of a bag)

In a large, deep skillet melt butter over medium high heat. Add chopped onions and stir until transclucent.

Add chicken to skillet, stir together with onion. Cover skillet until the meat is heated.

Use a mini spatula to clean out cans of cream of chicken soup and stir into the chicken mixture.

Season with salt and pepper. Stir well.

Then stir in cooked noodles.

Pour into a 2 1/2 quart or similarly sized casserole dish coated with non-stick cooking spray.

Sprinkle a generous layer of sharp cheddar cheese on top.

Bake in an oven preheated to 350℉ for 20 to 25 minutes until the cheese is melted and the chicken and noodle casserole is heated through. Enjoy warm!

Chicken Noodle Casserole Variations

  • Can mix in 1 to 2 cups of cooked broccoli or other mixed vegetables to taste more like soup.
  • Warm in a deep, covered skillet over medium high heat for 15 to 20 minutes until cheese is melted for a faster skillet meal.
  • Use one can of cream of chicken and one can of another cream of anything soup to mix up the flavors.
  • Leftover Thanksgiving turkey or Juicy Chicken breasts work great in this casserole.

Ingredients
  

  • 2 cups chicken cooked
  • 2 tablespoons butter
  • 1/2 cup onion chopped
  • 8 ounces egg noodles
  • 2 10.5 ounce cans cream of chicken soup
  • 3/4 cup milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper optional
  • 3/4 cup cheddar cheese

Instructions
 

  • Cook 8 ounces of dry noodles according to the directions on the bag. Drain and set aside.
  • Preheat oven to 350℉.
  • In a large skillet saute onions in butter over medium high heat.
  • Add cooked and chopped chicken to the skillet and warm.
  • Add cream of chicken soup, milk, salt, pepper and stir well.
  • Stir in cooked noodles. Once warm pour into a 2 1/2 quart casserole dish. Sprinkle shredded cheddar cheese over the top.
  • Cover with a glass lid or foil and bake for 25 minutes until warmed through and cheese is melted.
