Round Steak with Gravy

An easy gravy with a variety of flavors coats a Round Steak and bakes to become a tender and enjoyable meal.

A savory and slightly sweet gravy made of a packet of brown gravy mix, tomato soup and cream of mushroom soup is spooned over slices of round steak on a plate with mashed potatoes and green beans on a yellow and white plaid napkin.

An Easy Round Steak Recipe

The prominent flavor in the gravy is the tomato soup, but it’s complimented with brown gravy mix and cream of mushroom soup. This slightly sweet gravy creates the moisture that allows the round steak to cook until tender.

The acidity in the tomato soup helps tenderize the steak a bit, the liquid keeps it moist and a low and slow cooking time in the oven contributes to creating one of the most tender round steaks you’ll ever eat.

We like this comfort food recipe because it’s meaty, faster to cook than a traditional beef roast and more affordable as a smaller steak.

Ingredients Needed

  • Round Steak – Our was about an inch thick – a top round, eye of round or bottom round steak will work well.
  • Tomato Soup – Use condensed soup and don’t dilute.
  • Cream of Mushroom Soup – Can substitute for cream of onion if you don’t like mushrooms.
  • Brown Gravy Mix – A packet deepens the flavor of the gravy.
  • Onion – Granulated onion is easiest, but 1/2 a cup of chopped onion works great too.
  • Italian Seasoning – Half a packet of the dressing mix works great, there is plenty of flavor if this is omitted.
  • Garlic Powder – fresh garlic or granulated garlic are also great options.
  • Salt and Pepper
Ingredients to make round steak with gravy are a round steak, garlic powder, granulated onion, salt, pepper, tomato soup, brown gravy mix, cream of mushroom soup and Italian dressing mix on a wooden counter top.

How To Make Round Steak With Gravy

In a small mixing bowl stir together tomato soup, cream of mushroom soup, brown gravy mix and Italian seasoning.

Mix together salt, pepper, garlic powder and granulated onion and rub into the top of the steak.

Stir gravy together very well and pour over the steak. Cover tightly with foil and set in an oven preheated to 350℉.

Bake for 1 1/2 to 2 hours until tender.

What Is A Round Steak?

The beef round is the rear end of the cow that is very lean from being a heavily exercised muscle. This very large muscle rounds out the carcass and is round in shape.

Being very lean means a low and slow cooking method with lots of moisture or gravy will make the cut of meat much better.

The beef carcass is broken down into several large pieces of meat that are then cut into smaller pieces to sell in a grocery retail case. 

Growing up on a cattle farm, having meat butchered and ordering cuts as well as my OSU meat science classes has enabled me to try a variety of cuts like this one!

Recipe Tips and Tricks

  • If using a steak that’s thicker than 1″ the cooking time will need to increase.
  • My husband loves the meat to gravy ratio in this recipe, but I could easily cut the gravy in half or use twice as much meat and still love it.
  • Once tender the steak holds well covered with foil in the gravy in a warming drawer.
  • Leftovers can be stored in the refrigerator for up to 3 days, but we try to eat the steak when fresh out of the oven for maximum tenderness. Reheating can change the texture of the meat, so keep plenty of gravy.
  • Can easily add 8 ounces of chopped mushrooms to the steak while it cooks.

Ingredients
  

  • 1 – 2 pound round steak
  • 1 teaspoon Kosher salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 tablespoons minced onion

Gravy

  • 10.5 ounce can tomato soup
  • 10.5 ounce can cream of mushroom soup
  • 1/4 cup water
  • 3/4 tablespoon Italian seasoning mix
  • .87 ounce packet brown gravy mix

Instructions
 

  • Preheat oven to 350℉.
  • In a small mixing bowl stir together salt, pepper, garlic powder and minced onion and spread over the steak, rub in with your fingers.
    1 – 2 pound round steak, 1 teaspoon Kosher salt, 1/2 teaspoon black pepper, 1 teaspoon garlic powder, 1 tablespoons minced onion

Gravy

  • In the same bowl whisk together tomato soup, mushroom soup, water, Italian seasoning and brown gravy mix.
    10.5 ounce can tomato soup, 10.5 ounce can cream of mushroom soup, 1/4 cup water, 3/4 tablespoon Italian seasoning mix, .87 ounce packet brown gravy mix
  • Pour over steak, cover tightly with foil and bake for 1 1/2 to 2 hours until steak is fork tender.
