An Easy Meal With Ground Beef and Biscuits

Baking flaky, buttery biscuits on top of a flavorful hamburger and cheese casserole creates a one dish meal that even the picky eaters in our home enjoy.

Inspired by a recipe called Burger Mountains in an old church cookbook, we’ve tested variations of this casserole with refrigerated biscuit dough and with a Bisquick batter. Our family enjoys both options.

Bisquick really blends with the cheese and meat mixture creating the top of a hamburger bun on the casserole. The can of refrigerated biscuits remains more of their own entity, baking on top of the meat.

Ingredients Needed

  • Lean Ground Beef – we like at least 85% lean
  • Onion – chopped, using our mini food processor or a bag of frozen chopped onions is easiest.
  • Seasoned Salt – Lowry’s is the classic option, here’s a homemade version.
  • Tomato Soup – condensed soup helps create a Sloppy Joe like base layer.
  • American Cheese
  • Refrigerated Biscuits
Ingredients to make hamburger biscuit casserole are jumbo biscuits, seasoned salt, tomato soup, ground beef, onion and slices of American cheese on a wooden counter top.

Making The Biscuit Casserole

Cook and crumble the ground beef. Drain any excess fat.

Add seasoned salt and onion. Stir and cook onions until softened.

Then stir in the can of tomato soup and cook until warm.

Pour sloppy joe mixture in the bottom of a 9 x 13″ casserole dish.

Lay slices of cheese in an even layer coating the top of the meat.

Cut each biscuit in half and then cut each half into 3 or 4 pieces. Lay the chopped biscuits evenly over the top. Take care not to move the cheese.

Bake uncovered in an oven preheated to 350°F for 25 minutes until biscuits are flaky, golden brown and cooked through.

A Variation With Bisquick

A 16 ounce can of refrigerated biscuits can be substituted for 1 cup of Bisquick baking mix and 1/2 cup of milk mixed together and spooned over the slices of cheese.

Bake for about 15 to 20 minutes until the biscuits feel crusty and baked through. The biscuits may be done before turning golden brown.

  • 1 pound ground beef
  • 1 onion chopped
  • 2 teaspoons seasoned salt
  • 10.75 ounce can tomato soup
  • 8 slices American cheese
  • 16 ounces refrigerated biscuits

Instructions

  • Brown 1 pound ground beef and drain excess fat.

  • Add 2 teaspoons seasoned salt and 1 onion. Cook over medium heat until onion is tender.

  • Stir the undiluted 10.75 ounce can tomato soup into the meat. Pour mixture into a 9 x 13" baking dish.

  • Arrange 8 slices American cheese in a layer on top.

  • Cut 16 ounces refrigerated biscuits into 6 triangles each and arrange in a single layer on top of casserole.
