Greek Salad Dressing

Red wine vinegar is enhanced with garlic, lemon juice and herbs to make this easy, homemade Greek Salad Dressing.

We love to use this dressing recipe on our Greek Pasta Salad or a simple salad of cucumbers, tomatoes and red onions.

Easy Greek Dressing Recipe

Our homemade Greek dressing is light and lemony, has a fresh pop of garlic with a robust and tangy undertone from the red wine vinegar.

A friend shared this dressing recipe that she uses on Greek Pasta Salad and Mediterranean Pasta Salad. I’ve made several batches of each for a big banquet. Guests have raved about every cold salad that we’ve made!

Pro Tip – If using on pasta salad, add this dressing within two hours of serving for the best texture. If you add it the day before, the pasta absorbs the dressing and the salad becomes dry.

While we have the fresh ingredients on hand we like to make an extra batch of this Greek salad dressing recipe to pour over a simple mixture of baby cucumber slices and cherry tomato halves.

Ingredients Needed:

  • Virgin Olive Oil – eeov or extra virgin olive oil is fine too.
  • Red Wine Vinegar – use a high quality brand for the best dressing, avoid the value store brand.
  • Lemon Juice – use one large or two medium lemons for fresh squeezed flavor.
  • Garlic – fresh garlic is mild and has a noticeably higher quality in salad dressing.
  • Herbs – Dried basil and oregano are easy to keep on hand and mix in well.
  • Salt and Pepper – Use a coarse salt like sea salt or Kosher salt and freshly ground black pepper.
Ingredients to make Greek Dressing are virgin olive oil, red wine vinegar, fresh squeezed lemon juice, garlic, sugar, dried oregano, dried basil, sea salt and freshly ground black pepper on a wooden counter top.

Easy To Follow Directions

Pour olive oil, vinegar and lemon juice into a mason jar or another container with a tightly sealing lid.

We like to shake before serving, so ensure the seal works well on the container.

Add the garlic, salt, pepper, sugar, basil and oregano.

Stir well with a long handled spoon or seal and shake well.

This homemade dressing separates within minutes and will need to be mixed practically every time before serving on a green salad.

Ingredients
  

  • 1/2 cup virgin olive oil
  • 5 tablespoons red wine vinegar
  • 2 tablespoons lemon juice
  • 2 cloves minced garlic
  • 2 teaspoons granulated sugar
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon dried basil
  • 1/4 teaspoon sea salt
  • dash freshly ground black pepper

Instructions

  • Add 1/2 cup virgin olive oil, 5 tablespoons red wine vinegar, and 2 tablespoons lemon juice to a mason jar or tightly sealing jar.
  • Add 2 cloves minced garlic, 2 teaspoons granulated sugar. 1/2 teaspoon dried oregano, 1/4 teaspoon dried basil, 1/4 teaspoon sea salt and dash freshly ground black pepper. Stir well or seal tightly and shake. Seal immediately.
