Add a few slices of a tender and juicy chicken breast to get more protein and make this easy spinach salad idea into a main dish.

We love how the natural sweetness of strawberries and feta, with an almost lemon like undertone, lighten up and provide a enjoyable contrast to the spinach flavor.

Ingredients Needed:

  • Baby Spinach – smaller stems make eating easier. Regular spinach tastes fine, but takes more cutting in the bowl.
  • Poppy Seed Dressing – a bottle of the Panera brand is my favorite or here is a homemade poppy seed dressing option.
  • Red Onion – sliced thinly and used sparingly.
  • Sliced Almonds
  • Strawberries – sweet, ripe fruit makes a big difference in the flavor of this salad.
  • Feta Cheese – a container of crumbled is easiest to use.
Ingredients to make spinach salad are baby spinach, crumbled feta, sliced almonds, poppy seed dressing, sliced strawberries and thinly sliced red onions on a wooden counter top.

Poppy Seed Vs. Balsamic Dressing

The strawberries are not complimentary to the bitterness of the balsamic, the flavors fight a bit when paired with spinach.  These two can work when paired with romaine that’s a bit sweeter than spinach.

How To Make Spinach Feta Salad

Wash and spin the baby spinach. Tear any extra large leaves in half and trim any long stems if necessary.

Pour the dry spinach into a mixing bowl and add the dressing. Use tongs to toss together. Each piece of spinach should have a light coating of poppy seed salad dressing.

Use tongs to divide into two large bowls or 3 or 4 smaller bowls.

Add a few slices of red onion.

Then sprinkle almonds and strawberries on top.

Finish with a sprinkle of feta just before serving.

Can be covered and chilled for a couple hours ahead.
