French Onion Beef and Rice Casserole

An Easy Ground Beef and Rice Casserole

Butter, Consomme and French onion soup coat every grain of rice with so much flavor while ground beef and chopped mushrooms make this recipe hearty and satisfying.

Our Beef Consomme Rice is one of our most popular side dish recipes and goes great with about any plain chicken, pork, or beef. We tested variations to make a casserole with hamburger to create an easy dinner that fits into a busy schedule.

Ingredients Needed

  • White Rice – we typically use long grain, jasmine or a medium grain white rice.
  • Ground Beef – look for 85% lean or leaner.
  • Onion – we typically have a yellow or sweet onion on hand, white onion also works fine.
  • French Onion Soup & Beef Consomme – we look for the Campbells brand cans in the soup aisle.
  • Garlic Powder – granulated garlic or fresh minced garlic can also be mixed in with the ground beef.
  • Mushrooms – baby bella or white are fine – this is an optional ingredient that we love.
  • Butter – we always use the real stuff from cows, skip the margarine.
Ingredients to make a beef and rice casserole are cans of French onion soup, baby bella mushrooms, ground beef, an onion, a stick of butter, garlic powder and cans of beef consomme on a wooden counter top.

How To Make French Onion Beef and Rice Casserole

Preheat oven to 400℉.

Brown and drain ground beef. Season with garlic powder and stir.

Mix in onion and cook until it’s tender and translucent.

Pour beef mixture in the bottom of an ungreased casserole dish.

Cover with an even layer of uncooked white rice. Then layer chopped mushrooms.

Pour both cans of French Onion Soup and Beef Consomme over the top.

Then slice butter and spread out over the beef and rice recipe.

Do not stir. Cover tightly with foil and bake for 50 minutes. Remove from the oven and stir well. If rice is tender the meal is ready to serve.

If rice is still a little crunchy, cover again with foil and bake for an additional 10 to 15 minutes.

Ingredients
  

  • 1 pound lean ground beef
  • 1 medium onion chopped
  • 1 teaspoon garlic powder
  • 2 cups white rice uncooked
  • 8 ounces mushrooms chopped
  • 21 ounces French onion soup
  • 21 ounces Beef consomme
  • 1/2 cup butter

Instructions

  • Brown and drain 1 pound lean ground beef.
  • Add 1 teaspoon garlic powder and 1 medium onion chopped to skillet; mix in and cook until tender.
  • In a 9 x 13" spread beef and onion mixture in an even layer.
  • Then spread a layer of uncooked 2 cups white rice on top.
  • Layer 8 ounces mushrooms, chopped. then pour two cans or 21 ounces French onion soup and two cans or 21 ounces Beef consomme over the top.
  • Slice 1/2 cup butter and arrange evenly over the top.
  • Cover with foil and bake for 50 minutes to an hour in an oven preheated to 400℉. Remove from oven and stir well. Serve warm when rice is tender.
