We have this skillet recipe for Kielbasa and Potatoes that we converted to make a bigger batch in the oven with less hands on time and much less stirring.

As we tested several options of how to cut the potatoes and Kielbasa we learned the shape doesn’t really matter, but the size does. Having the same size of pieces helps everything cook more evenly and makes bites more enjoyable! Trying a couple different variations of this meal helped us find our favorite.

To add more ingredients to this easy dinner here is a recipe to make Sheet Pan Sausage, Peppers, Onions and Potatoes.

Ingredients Needed:

  • Kielbasa – also known as Polska Kielbasa and very similar to Smoked Sausage. The star of the meal that is packed with nutrients that are hard to get from plant-based diets alone, like B12, iron, zinc and essential fatty acids!
  • Potatoes – we like how baby red potatoes become tender so easily and how the flavor compliments the pork sausage.
  • Broccoli – an optional addition that adds a new texture and more fiber to the meal.
  • Italian Seasoning – a key flavor to sprinkle on the potatoes.
  • Kosher Salt – bigger granules improve the flavor of the potatoes and broccoli.
  • Pepper – we have a black pepper grinder to add a fresh coat of flavor to each bite.
Ingredients to make kielbasa in the oven are Kielbasa sausage, baby red potatoes, olive oil, salt, pepper, Italian seasoning and broccoli on a wooden counter top.

We use two packages of Kielbasa because having a quality meat in the meal can help with improved concentration from the protein, selenium and choline to keep you going and energized.

What Size Should The Sausage and Potatoes Be?

Thick coins of smoked sausage and slightly smaller than bite sized pieces of potatoes and broccoli work best for us. This will maximize the amount of food that fits on the sheet pan and allow you to feed up to 6 people.

My friends prefer cooking bigger chunks of Kielbasa because they stay juicier. The downside is you need to cut the pieces on your plate before eating which can be trickier for young kids.

Slicing the potatoes means they’re more likely to stick to the sheet pan and they take up a lot more space compared to chunks or cubes. A much smaller quantity can be prepared on one pan.

Kielbasa is not intimidating since it’s precooked. Just warm through and the meat is safe to eat.

Use a turner or spatula to stir everything on the tray. This helps prevent sticking. Turning ingredients over will also help them cook more evenly.

Finally add the slices or chunks of Kielbasa and bake 10 more minutes.

The sheet pan version takes about 30 to 40 minutes for all food to become tender on the inside and crispy roasted on the outside.

Bite size pieces of potatoes take about 30 minutes to roast at 400°F. Turn two or three times to prevent sticking and to help cook as evenly as possible.

Recipe Tips and Tricks

  • Add well drained sauerkraut to the sheet pan for the last ten minutes to warm up and crisp a bit. Here’s our recipe for Kielbasa and Sauerkraut in a skillet that’s easy to transfer to a sheet pan meal.
  • The leftovers are amazing when heated in a skillet with a couple eggs cracked in with the meat and potatoes. It’s similar to our Breakfast Skillet.
  • We find onions are more likely to burn when roasting than in a skillet with frequent stirring.
  • When a sheet pan is packed full it will take longer to cook through than if the food is spread out more.
  • Kielbasa has a great mix of protein and fat that helps us feel full longer. We like to mix this meal into a weekly menu that also includes pork tenderloin which is as lean as a boneless, skinless chicken breast.
