Best Bacon Cheeseburger Meatloaf

Cheeseburgers loves will drool over these Bacon Cheeseburger Mini Meatloaves. This recipe is so easy it’s one of our BEST family meals.

Ketchup and mustard drizzled over a cheesy meatloaf stuffed with bacon is hard to beat! Serve with mini pickles and sliced cherry tomatoes for a complete meal that is a real crowd pleaser.

Mini Bacon Cheeseburger Meatloaves

Cheeseburgers and Farmhouse Meatloaf could sustain our family. When we don’t have the time and energy to plan a meal these are the go to recipes on our menu.

The first time we dressed up an entire meatloaf our Crock Pot Bacon Cheeseburger Meatloaf was created. But we have loved how fun and easy these Mini Taco Meatloaves and Mini Pizza Meatloaves are.

When a friend shared that their family makes mini cheeseburger meatloaves garnished with ketchup, mustard, baby pickles and onions we combined our best recipes to produce this excellent family meal! We typically serve with Air Fryer Broccoli, Air Fryer Roasted Cauliflower, or Bacon-Onion Green Beans.

I love that this recipe makes a big batch. The leftovers make at least two more meals and taste great re-heated. Wrapping the miniature meatloaves individually in small freezer bags is an easy way to make freezer meals too.

How to Know When Meatloaf is Done

To ensure food safety always use a digital meat thermometer inserted in the center or thickest part of the meatloaf. When the thermometer reads 160°F the meatloaf is done.

Meatloaf made of ground pork and ground beef is done when the center reaches 160°F. If ground chicken or ground turkey is used the center needs to be cooked to 165°F to meet food safety guidelines.

How Long to Cook Meatloaf at 350°F

Miniature meatloaves typically cook in a 25 – 35 minutes in a 350°F oven.

A recipe with about two pounds of meat in an 8 x 8 pan takes about an hour to cook in a 350°F oven.

Bacon Cheeseburger Casserole

This same recipe can be spread in an 8 x 8 inch or 9 x 9-inch square pan to make a casserole. Bake at 350°F for 1 hour or until a meat thermometer reads 160°F.

The bacon could be mixed in or the casserole could be covered with strips of bacon. If the bacon cooks quicker than the casserole cover with foil to allow the casserole to finish baking.

Tips for Making Mini Cheeseburgers

  • We prefer bacon that is fried and crumbled, but 3/4 cup of bacon bits works fine too.
  • Ketchup can be substituted for barbecue sauce based on your preferences.
  • Place slices of cheese on top, ketchup and mustard can be drizzled on top or bottom of cheese. Too much drizzle in between the meat and cheese may cause the cheese to run off.
  • Stiff slices of cheddar cheese can slide off before melting, where slices of American cheese will melt and gently form to the meatloaves where ever they are laid.
  • I like to use a 1 cup measuring cup to portion out equally sized meatloaves. This recipe makes about 9 mini meatloaves.

How To Make Bacon Cheeseburger Mini Meatloaves

  1. Lightly beat eggs and stir in milk. Add croutons and allow to sit until croutons soften. I like to to chop onions while the croutons soften and stir a time or two to coat more sides with egg and milk and help them soften more quickly. Beat with an electric mixer until no more crunchy pieces are left.
  2. Mix in ground beef, ground pork, bacon, cheese, ketchup, onions, salt and pepper.
  3. Divide meatloaves into equal portions and use palms of hands to shape into mini loaves. I find using a 1 cup measuring cup to divide up the meat makes the process go quickly and smoothly.
  4. Cover a large baking sheet with foil and place meatloaves spaced out evenly.
  5. Bake at 350°F for 25 minutes. Then drizzle a little bit of ketchup on each meatloaf, add onions and slices of cheese.
  6. Return to the oven for another 5 – 10 minutes until the cheese is melted and a digital meat thermometer registers an internal temperature of 160°F.
  7. Garnish with pickles, tomatoes, lettuce or any other desired toppings. Drizzle with a bit more ketchup and mustard if desired.

Ingredients

  • 1 pound lean ground beef
  • 1 pound ground pork
  • 10 strips bacon cooked and crumbled
  • 10 ounces croutons
  • 3/4 cup milk
  • 2 eggs beaten
  • 1/2 cup onions chopped
  • 1/2 cup ketchup
  • 1 cup shredded cheddar cheese
  • 1 teaspoon salt
  • 1 teaspoon pepper

Topping

  • 1/4 cup ketchup drizzle on top of meatloaves
  • 1/4 cup mustard drizzle on top of meatloaves
  • 1/4 cup onion slices
  • 9 slices cheese cheddar or American

Instructions

  • Beat eggs and stir in milk. Add croutons and then mix using an electic mixer. Let stand for 5 minutes. Then mix well until no crunchy pieces are left.
  • Add ground meat, 1 cup cheddar cheese, onions, salt, pepper, bacon bits, 3/4 cup ketchup. Mix well.
  • Divide mixture in half until you have 8 evenly sized mini meatloaves. Use palms of your hands to shape.
  • Bake for 25 minutes, then top with ketchup, raw onion and slices of cheese
  • Bake 5 – 10 minutes at 350°F until internal temperature reaches 160°F using a digital thermometer.
  • Top with drizzles of ketchup and mustard and serve with pickles.
