Italian Chicken Skillet
Zucchini and tomatoes are nestled in a rich, creamy mixture that coats cubes chicken and pasta in this easy skillet meal.
Our Italian Chicken Skillet recipe makes four nice sized servings that cook up in 20 minutes or less. Great with Orzo or cauliflower rice for a low carb option, this is a versatile family dinner.

When there’s plenty of garden produce, chop it up and mix some juicy tomatoes and squash into this protein packed dinner.
A Quick Skillet Meal
Our family loves the combination of pasta, meat and veggies in a whipped garlic and herb cream cheese sauce. I’ve gotten several compliments on this recipe, so I look forward to preparing it!
There’s four nice sized servings in this chicken and pasta skillet that are a bit more filling than our Saucy Chicken recipe or Hamburger Cabbage Skillet.

Italian herbs flavor the cream cheese and make this Italian chicken skillet meal so enjoyable. It’s also whipped which means that it melts into a cooking creme much easier than a traditional block of cream cheese.
Low Carb Option With More Vegetables
The same rich, creamy sauce easily coats a bag of cauliflower rice and fresh veggies to make a low carb skillet meal. Riced cauliflower doesn’t absorb the sauce in the same way that pasta does, but the texture and flavor are very similar.
Simply substitute the cooked pasta for a 12 ounce bag of cooked riced cauliflower. Drain the cauliflower well before stirring into the skillet recipe.

Ingredients Needed
- Chicken Breast – We use about 1 1/2 large boneless, skinless chicken breasts and cut into smaller than bite size cubes before cooking.
- Oil – whatever type you prefer to prevent the chicken from cooking – I use canola or olive oil.
- Meat Seasoning – I love this garlic salt and pepper seasoning and use it on meat all the time.
- Garlic and Herb Cream Cheese – I buy the tub of Philadelphia brand that’s typically on a shelf above the blocks, here’s a homemade recipe if needed.
- Cherry Tomatoes – more flavor and less water than bigger tomatoes.
- Zucchini – be sure to use young, tender squash, avoid large squash with big seeds.
- Pasta – we like orzo (that looks like rice) or ditalini – a super small pasta that easily blends in the delicious sauce mixture.

Step By Step Instructions
Cook pasta according to the directions on the package. Measure two cups after cooking. My kids love making a whole box and using the rest in mac and cheese.
Set a large skillet on the stove top over medium heat. Add oil and allow to heat.


Add pieces of chicken and cook about 2 minutes. Then add coarsely chopped zucchini. Cover and stir a couple times over 5 to 7 minutes until chicken is cooked through.
Stir in the herb and garlic cream cheese and tomatoes until creamy. Cook about 2 minutes to warm through and soften the tomatoes slightly.


Add cooked pasta, stir well and serve immediately.

This is a great recipe to meal prep! Cook pasta and stir in a tablespoon of butter before refrigerating. Chop chicken and veggies and store in separate containers in the refrigerator up to two days before cooking.

Italian Chicken Skillet
Ingredients
- 1 tablespoon oil
- 2 cups chicken breasts cubed
- 2 teaspoons sea salt, granulated garlic and pepper
- 1 small zucchini coarsely chopped
- 7.5 ounces garlic and herb whipped cream cheese
- 3/4 cup cherry tomatoes chopped
- 2 cups orzo pasta cooked
Instructions
- Cook pasta and measure 2 cups of cooked pasta, set aside.2 cups orzo pasta
- Heat oil in a large skillet over medium high heat.1 tablespoon oil
- Add chicken and season.2 cups chicken breasts, 2 teaspoons sea salt, granulated garlic and pepper
- Cook for 2 – 3 minutes, stir and then add zucchini.1 small zucchini
- Keep skillet covered and stir occasionally until chicken is cooked through – about 5 to 8 minutes.
- Add tomatoes and whipped cream cheese seasoned with herbs to the skillet and stir.7.5 ounces garlic and herb whipped cream cheese, 3/4 cup cherry tomatoes
- Stir in cooked pasta. Once the skillet is warmed through serve and enjoy!
