Slow Cooker Fiesta Chicken

Shredded chicken is filled with plenty of cream cheese, black beans, corn and tomatoes to make a delicious mixture that’s great in tacos, enchiladas, soup or with a salad.

Creamy Fiesta Chicken Recipe

Also known as Mexican shredded chicken, this is a great base recipe to meal prep and use in a variety of meals throughout the week.

This Fiesta Chicken Recipe is easy to double or customize to suit your needs. Add chicken broth and have a soup. Use more chicken breasts and have an extra meaty mixture that makes a protein packed salad topper. We like to keep Chopped Salad in our fridge and this creamy mixture pairs perfectly to help mix up our lunch time menu.

Our kids enjoy spooning the warm shredded chicken in tacos and adding cheddar cheese and lettuce. Sometimes they eat it as a dip with tortilla chips or on slider rolls like our . This is a great recipe to make once and allow family members to personalize.

One friend that I shared this meal with said it reminds her of Cowboy Caviar with meat. I think it’s a Mexican spin with more fiber and veggies than our Crockpot Chicken Bacon Ranch Recipe.

Ingredients Needed

  • Chicken Breasts
  • Black Beans
  • Corn
  • Diced Tomatoes – Fire roasted tomatoes or salsa
  • Cream Cheese
  • Seasonings – packet of ranch seasoning mix, cumin, chili powder, onion powder
Ingredients to make Fiesta chicken are cream cheese, ranch seasoning mix, corn, diced tomatoes, cumin, chili powder, onion powder, chicken breasts and black beans on a wooden counter top.

Step By Step Instructions 

Spray crock with non stick cooking spray or use a liner.

Add chicken breasts in a single layer across the bottom.

If doubling the recipe, place second layer around the outside, leaving some space in the center if possible to help cook through more evenly.

Drain black beans and rinse. Pour beans, corn and undrained can of tomatoes over the meat.

Sprinkle seasonings over all of the contents.

Place block of cream cheese on top.

Cover and cook on low for 5 to 6 hours until all chicken shreds easily.

The crock pot will cook the outside and bottom pieces of chicken faster. We typically don’t touch until dinner time when we’re ready to stir and serve. You can rotate the chicken mid way through cooking to speed up the process if needed.

Ingredients
  

  • 2 – 3 chicken breasts
  • 15 ounce can black beans drained
  • 15 ounces whole kernel corn
  • 15 ounces petite fire roasted tomatoes
  • 1 teaspoon cumin
  • 1 tablespoon chili powder
  • 1 teaspoon onion powder
  • 1 ounce ranch seasoning packet
  • 8 ounces cream cheese

Instructions

  • Place trimmed chicken breasts in a slow cooker coated with non-stick cooking spray.
    2 – 3 chicken breasts
  • Drain black beans and pour over chicken. Add corn and tomatoes to the slow cooker.
    15 ounce can black beans, 15 ounces whole kernel corn, 15 ounces petite fire roasted tomatoes
  • Sprinkle seasonings over top of all the other ingredients.
    1 teaspoon cumin, 1 tablespoon chili powder, 1 teaspoon onion powder, 1 ounce ranch seasoning packet
  • Slice cream cheese and lay across the the top.
    8 ounces cream cheese
  • Cover and cook on low for 6 to 8 hours.
  • Shred chicken and stir all ingredients together and serve.
