Cream Cheese Chicken Chili
Rich and creamy, this Crock Pot Cream Cheese Chicken Chili is loaded with shredded chicken, corn, beans, and tomatoes in a thick, cheesy broth.
Toss all ingredients into a slow cooker, set to low and an easy meal is ready to enjoy 6 to 8 hours later.

Crock Pot Cream Cheese Chicken Chili Recipe
Inspired by our Fiesta Chicken recipe this is a versatile soup recipe our family enjoys. We’ll often begin the week with salad toppings prepped and this is a great meal to toss the leftovers in the slow cooker along with chicken breasts to make a really easy Cream Cheese Chili!
The cream cheese base is different than our tomato based chilis like Traditional Slow Cooker Chili and Monterey Chicken Chili. With dairy base, this is a chili that works best cooking in a low and slow appliance like the slow cooker.

Sprinkle the crushed up tortilla chips from the bottom of the bag over the top and garnish with your favorite toppings for a dinner that takes less than 15 minutes of hands on time.
Ingredients Needed
- Chicken Breasts – boneless, skinless and trimmed very well. We use two breasts for a lighter soup and three breasts when we want a more protein dense chili.
- Cans of Frozen Black Beans, Sweet Corn OR Cream Style Corn and Diced Tomatoes – Rotel is often used, but we prefer the fire roasted tomatoes. We grow sweet corn and freeze it which is great for this soup, otherwise I would use a can of cream style corn.
- Seasonings – ranch seasoning and salad dressing mix, cumin, chili powder and onion powder.
- Cream Cheese – a whole block makes this recipe special.
- Chicken Broth – we prefer Better Than Bouillon.
- Toppings – cheddar or marble cheese, tortilla chips, avocado, jalapeno or cilantro.

Recipe Tips
- Shred chicken and stir in cream cheese, then test the soup. Can add 1 cup of additional broth to thin the chili or additional seasonings if plain chicken is the primary flavor.
- If using the stove top take care not to burn the cream cheese.
- When using 3 chicken breasts for a meatier meal, additional seasonings are typically required for the best flavor.

Crock Pot Cream Cheese Chicken Chili
Ingredients
- 1 1/2 pounds chicken breasts
- 15 ounce can black beans drained and rinsed
- 15 ounce can cream style corn
- 15 ounce can fire roasted tomatoes diced
- 8 ounces cream cheese
- 1 teaspoon cumin
- 1 tablespoon chili powder
- 1 teaspoon onion powder
- 1 ounce packet ranch seasoning
- 1 cup chicken broth
Instructions
- Lay trimmed chicken breasts in the bottom of a slow cooker.1 1/2 pounds chicken breasts
- Drain and rinse black beans, pour over chicken. Add can of cream style corn (undrained) or a can of whole kernel corn (drained). And can of diced tomatoes (undrained).15 ounce can black beans, 15 ounce can cream style corn, 15 ounce can fire roasted tomatoes
- Lay block of cream cheese in the center of the crock pot.8 ounces cream cheese
- Sprinkled seasonings over the top. Pour chicken broth in. Cover and set to low for 6 to 8 hours.1 teaspoon cumin, 1 tablespoon chili powder, 1 teaspoon onion powder, 1 ounce packet ranch seasoning, 1 cup chicken broth
