Chocolate Covered Strawberry Cake
A rich and creamy chocolate ganache frosting tops a layer of fresh sliced strawberries that rest on a moist strawberry cake.
Easy enough for anyone to make, this is the perfect birthday cake recipe for people who love chocolate covered strawberries!

An Easy Chocolate Strawberry Cake Recipe
Chocolate Covered Strawberry Cake enhances a cake mix with sour cream and instant pudding to create a delicious cake layer. Add as many fresh strawberries as your heart desires. Then finish off this unique cake with chocolate chips melted in warm whipping cream to create a wonderful ganache.
The base recipe started with our Chocolate Box Cake recipe. We’ve tested several recipes over the years to create the best chocolate strawberry cake. The fresh strawberries blend so well with this ganache topping to make a cake that feels fancy, but is pretty easy to make at home!
Just like our Chocolate Mint Cake and Pina Colada Cake, this is a special dessert recipe that we often make on Valentine’s Day, Mother’s Day or for a birthday cake.

Ingredients Needed
- Strawberry Cake Mix
- Instant Vanilla Pudding – a small box
- Eggs
- Sour Cream
- Warm Water
- Vegetable Oil
- Fresh Strawberries
- Whipping Cream
- Semi-Sweet Chocolate Chips

Step By Step Instructions
Grease a 9 x 13 pan or 2-9 inch pans for a layered cake and preheat the oven to 350°F.
Mix strawberry cake mix, vegetable oil, vanilla pudding, eggs, sour cream and water.


Bake 30 – 45 minutes at 350°F until a toothpick inserted in the center comes out clean.
Allow cake to cool.
Add a layer of fresh sliced strawberries.

Heat whipping cream and then pour over chocolate chips in a mixing bowl. Let set for 5 minutes before stirring.


Refrigerate before pouring over the cake.

Chill and serve. Store tightly covered in the refrigerator.
Recipe Tips and Tricks
- Allow cake to cool completely before adding fresh strawberries and chocolate topping.
- We have previously served this cake with Cool Whip, fresh strawberries and a hot fudge drizzle. That version is wonderful too, the whipped topping just doesn’t hold up for very long.
- Store in the refrigerator, but plan to use within 2 to 3 days for best results
- Different brands of cake mix take different amounts of time to bake, so check early and often to avoid burning
- Keep the cake moist by covering the cake with plastic wrap shortly after it’s been removed from the oven – this will help keep moisture in the keep as it cools.

Chocolate Covered Strawberry Cake
Ingredients
Cake
- 1 box strawberry cake mix
- 3.4 ounce package instant vanilla pudding
- 4 large eggs
- 1 cup sour cream
- 1/2 cup warm water
- 1/2 cup vegetable oil
- 1 1/2 cups strawberries sliced
Ganache Topping
- 2 cups whipping cream
- 2 cups semi-sweet chocolate chips
Instructions
- Mix cake ingredients and stir well.1 box strawberry cake mix, 3.4 ounce package instant vanilla pudding, 4 large eggs, 1 cup sour cream, 1/2 cup warm water, 1/2 cup vegetable oil
- Use a 9 x 13 pan or 2-9 inch pans for a layered cake.
- Bake 30 – 35 minutes at 350℉ until a toothpick inserted in the center comes out clean.
- Let cake cool. Spread whipped topping over cooled cake. Sprinkle with chopped strawberries and drizzle with hot fudge.1 1/2 cups strawberries
Ganache Topping
- Pour chocolate chips in a medium mixing bowl and set aside.2 cups semi-sweet chocolate chips
- Using a small saucepan on the stove heat heavy cream over low heat just util bubbles start to appear around the edges. Do NOT boil.2 cups whipping cream
- Pour warm cream over chocolate chips and let sit for 5 minutes. Then stir until chips are melted and the mixture is smooth.
- Set bowl in the refrigerator for about 20 to 30 minutes to cool off. Once cool pour over cake, cover and refrigerate until ganache topping is set. Cut pieces and serve.
Notes

Hello I couldn’t find the white chocolate pudding mix so I got the regular fudge, I was thinking of not putting it in but I did on accident and it looks like a chocolate cake now haha.
