Banana Lollipops Dipped in Chocolate & Peanut Butter

Bananas become lollipops when dipped in melted chocolate and peanut butter chips and rolled in crushed nuts and cereal. This light and sweet treat is perfect for a snack or a dessert with fresh fruit.

Banana Lollipops

Chilled bananas coated with peanut butter and chocolate are topped off with crunchy, crispy rice cereal to make delightful banana lollipops. This light dessert made with fresh fruit is a kid and adult favorite recipe!

Melting peanut butter chips along with the milk chocolate chips softens the flavor and adds another delicious dimension. If you don’t have peanut butter chips I think the recipe will still taste great with a stronger chocolate flavor.

We absolutely love the chocolate and peanut butter combination in our Chocolate & Peanut Butter Rice Krispie Treats, Flat Buckeyes, and Peanut Butter Cookies with a Chocolate Kiss.

As the New Year begins we still want to enjoy desserts once in a while, but we’re looking for recipes that are lighter than some of our tried and true favorites like the Best Moist & Rich Chocolate Cake.

I would like to melt a big bowl of chocolate to dip strawberries and pretzels and make these dipped bananas at the same time.

Just like when you dip strawberries or other fruit in chocolate the fruit should be of good quality and ripeness that you enjoy. I like to eat dipped fruit within 1 to 2 days for maximum quality and freshness!

Another cool and refreshing treat that we love in warm weather is our Simple Strawberry Popsicles.

Fun Treat for Kids

Our kids enjoy helping make these banana lollipops because they like bananas, chocolate and peanut butter chips and Rice Krispie cereal. We add nuts for a little more protein and crunch. I look forward to making these again at Valentine’s Day along with our Valentine Treats for Kids.

Depending on the age of the kids helping make the Banana Lollipops Dipped in Chocolate and Peanut Butter they may need help spreading out or drizzling the chocolate mixture on the bananas.

Get creative, a heavy layer of chocolate can mean dipped fruit and a lighter layer of chocolate means drizzling the mixture on more bananas.

We’ve made this recipe using both skewers (because that’s all we had on hand) and then again after purchasing popsicle or ice cream sticks. The popsicle sticks are preferred because they are much easier for little kids to hold onto and eat off of. The bananas tend to spin a bit on a round skewer and take more coordination to eat.

When we came across the idea to make bananas into lollipops in an old 4-H cookbook we knew we had to put our own spin on it and give it a try! We will be making these for years to come because they are so delicious!

Tips for Making Chocolate Covered Bananas

  • Begin with good quality fruit with a ripeness that you prefer
  • Popsicle or ice cream sticks are much easier to use than skewers or round sticks
  • Use a spoon, spatula or butter knife (whatever is easiest) to spread or drizzle chocolate mixture on bananas
  • Crispy rice cereal can be substituted for chopped cheerios or your favorite cereal
  • Enjoy chocolate dipped fruit within 1 – 2 days
  • Store in an airtight container in the refrigerator

How to Make Banana Lollipops

  1. Chop nuts or place nuts on cutting board and break into small pieces with a rolling pin.
  2. Stir nuts and cereal together.
  3. Peel bananas and cut in half. Place bananas on popsicle sticks.
  4. In a small saucepan heat shortening over low heat until melted.
  5. Add peanut butter chips and chocolate chips. Stir continuously until chips are melted and the mixture is smooth. Remove pan from the heat.
  6. Use a butter knife or spatula to spread chocolate mixture over the bananas. Roll in cereal and nut mixture and place on a cookie sheet covered in wax paper to prevent sticking.
  7. Return to cookie sheet and refrigerate until firm, about 30 minutes.

Ingredients

  • 1 cup crispy rice cereal
  • 1/4 cup nuts chopped
  • 4 bananas
  • 2 teaspoon shortening
  • 1/2 cup milk chocolate chips
  • 1/2 cup peanut butter chips
