A Chickle Is A Cheese Wrapped Pickle

Salty, briny dill flavored pickles cooked in cheddar cheese that browns and crisps up is a recipe that is trending on TikTok. Chickles are enjoyable to eat and blend complimentary flavors to create a fun and easy snack.

My college friend shared that she and her roommates always have pickles and cheese on hand and make these regularly while hanging out.

Best Type of Cheese To Use

Mild cheddar is much better than sharp cheddar. It is more difficult to taste the pickle as the sharpness of the cheddar increases. 

Squares of cheese are easier to cook and they look more aesthetic.

Shredded cheese takes 30 sec or less where a slice takes more like a minute. In this picture we tested shredded cheese and struggled to get it to brown evenly.

Important Preparation Steps

Before cooking lay out the slices of cheese in a single layer and allow them to come to room temperature.

Remove pickles from the brine and lay on a paper towel to absorb some of the excess liquid.

Don’t skip these steps to make the best Chickles possible!

Step By Step Instructions

Set a non-stick skillet on medium heat. Wait until the skillet is heated through to add cheese.

Have a spatula ready with a narrow, angled end that can more easily scoot under the edges of the cheese.

Lay one slice of mild cheddar cheese in the skillet. Wait until the cheese has small bubbles all across it and add a pickle.

Place the pickle off center.

These work perfectly when you flip one side up to the top of the pickle spear.

Like a pancake, when you see it start to bubble up lift up a corner and fold over.

Then quickly fold the cheese, like almost as fast as humanly possible flip the cheese so it just browns, not burns. This can be a challenge. 

The cheese should be crisp enough to fold but not so crisp that it’s burnt. If it’s not foldable, the cheese will ooze so timing is key. Frying chickles is an art takes a couple practice rounds.

If the cheese is oozing in some spots then roll a couple times in the skillet to brown or fry each side evenly. Using warmer slices of cheese will likely prevent this problem.

Using medium high heat works okay if you move really fast. Turning down to medium heat is best as it takes some of the stress off of the need to constantly move as fast as possible.

Adding Salami or Pepperoni

Salami is far preferable to pepperoni. One or two pepperonis are simply overshadowed by the pickle.

If you do want to add a salty meat, it needs to be enough for the flavor to be noticeable and complimentary.

Takes a more substantial piece of meat. One or two pepperonis is hardly noticeable. For the flavor to be present and enjoyable use a larger piece of salty meaty in between the cheese and pickle layer.

Recipe Tips and Tricks

  • Become more crispy as they cool off and dry out. Texture is more crispy like a potato chip on the outside as they cool. 
  • Begin making one at at time. If this is easy then slowly work your way up to 2 or 3 at a time.
  • If chickle making doesn’t go well, change one variable at a time until it works for you!
  • We tested using non-stick spray and without spray and didn’t have a preference.

Ingredients
  

  • 8 slices mild cheddar cheese
  • 8 dill pickle spears

Instructions

  • Lay cheese out in a single layer and allow to come to room temperature before beginning.

  • Lay pickles out in a single layer on paper towels to absorb some of the liquid.

  • Set a skillet on medium heat and allow the skillet to preheat.
  • Add 1 to 3 slices of cheddar cheese. Once the entire slice begins to bubble lightly lay a pickle spear across across each slice of cheese. Place the pickle off center, or with 2/3 of the cheese slice showing on one side and 1/3 on the other side.
  • Once the cheese is crisp enough to fold use a non-stick spatula with a narrow edge to lift the short (1/3) side of cheese up the side of the pickle.
  • As quickly as possible lift the other side of the cheese over the other side of the pickle. Roll to each side to finish cooking the cheese evenly if needed.
  • Quickly remove from the skillet.
  • Scrape excess pickle juice off to the side of the skillet in between each batch of chickles.
