Ingredients

Instructions
Lay cheese out in a single layer and allow to come to room temperature before beginning.

Lay pickles out in a single layer on paper towels to absorb some of the liquid.
8 dill pickle spears
Set a skillet on medium heat and allow the skillet to preheat.
Add 1 to 3 slices of cheddar cheese. Once the entire slice begins to bubble lightly lay a pickle spear across across each slice of cheese. Place the pickle off center, or with 2/3 of the cheese slice showing on one side and 1/3 on the other side.
Once the cheese is crisp enough to fold use a non-stick spatula with a narrow edge to lift the short (1/3) side of cheese up the side of the pickle.
As quickly as possible lift the other side of the cheese over the other side of the pickle. Roll to each side to finish cooking the cheese evenly if needed.
Quickly remove from the skillet.
Scrape excess pickle juice off to the side of the skillet in between each batch of chickles.
