Dried Beef Roll-Ups

Whether you add a baby dill pickle or not, these Dried Beef Roll-Ups with cream cheese are easy and delicious! This recipe with only a few ingredients creates a great low-carb and keto snack or appetizer!

Dried Beef & Cream Cheese Roll-Ups

The unique combination of flavors works so well together. The vinegar in the pickles, rich and creamy cream cheese and salty dried beef create a simple snack or appetizer that you crave.

Similar to our Salami Roll-Ups, a coat of cream cheese on a slice of dried beef is the base recipe. Amp it up by adding a little horseradish to the cream cheese and sprinkling sliced green onions in the wrap.

Or the more popular option is to wrap a baby dill pickle inside a dried beef and cream cheese roll-up.

  • Great make ahead idea for a crowd that is very easy to recruit a friend to help.

What’s In A Dried Beef Roll-Up?

Dried Beef covered with cream cheese is the most basic roll-up. We use a large, 4.5 ounce jar of Armour dried beef in this recipe.

A block of cream cheese is the cheapest option, but a tub of Philadelphia cream cheese is softer and often easier to spread.

Another option is to wrap a baby dill pickle in a cream cheese coated slice of dried beef.

Adding a squirt of horseradish to the cream cheese can give this a tangy more sophisticated spin. We don’t recommend using horseradish with pickles, but this is a personal preference.

Creamy horseradish will be more mild than a regular horseradish which will expose more of the spicy flavors.

Ingredients to make dried beef roll ups are kosher baby dill pickles, creamy horseradish, armour dried beef, cream cheese and sliced green onions on a white counter top.

How To Make Low-Carb Beef Roll-Ups

Soften cream cheese so that it’s smooth and easy to stir.

If using horseradish add it to the cream cheese and stir again.

I find it easier to work on a cutting board.

Lay out several pieces of meat and use a butter knife or small spatula to spread a thin, even layer of cream cheese over each slice of dried beef.

Roll into a tight wrap. If cream cheese is spread all the way to the edge then the meat will stick to itself and stay closed.

You can add a cocktail tooth pick with the frilly tail to display if you like.

Arrange in a neat pattern on a white plate or serving platter.

Cover with plastic wrap and chill until ready to serve.

Dried Beef Pickle Roll-Ups

Spread about a teaspoon of cream cheese on each slice of beef.

Place a drained baby dill pickle in the center of each slice.

These pickles are sized to fit perfectly inside a piece of beef.

If cream cheese is spread all the way to the edge the overlapping meat will stick together.

We tried making slices of beef and pickle bites, but find that a roll-up is much easier to make, cut and keep together than the slices.

Pickles have a vinegar flavor that may conflict with a strongly flavored horseradish, so we just use cream cheese with the pickles.

Another Variation With Green Onions

Spread cream cheese on slices of beef and sprinkle slices of green onions in a row down the center.

Store in an airtight bag or container in the refrigerator until ready to serve!

Ingredients
  

  • 4.5 ounce jar dried beef
  • 4 ounces cream cheese softened

Optional Additions

  • 1 tablespoon creamy horseradish
  • 3 green onions sliced
  • baby dill pickles

Instructions
 

  • Spread 1 teaspoon of cream cheese evenly on each slice of beef. Add horseradish if using. Spread cream cheese mixture to the edge of the meat.
  • Sprinkle green onions in a row down the center or add a baby dill pickle to the center of the meat if using.
  • Roll-up or fold each piece with the cream cheese inside. Roll should stick with cream cheese, but securing with a decorative toothpick is optional.

    I’ve been making these for decades especially for holidays, football games, or parties in general. I have tried many variations including green olives, red crushed peppers, sliced hot peppers, etc. and mark them with colored toothpicks (red for hot lol), but our mainstay or base recipe is beef slices, cream cheese, and horseradish adjusted to taste. A little fresh ground black pepper adds a flavor dimension too.
