Cherry Bread Recipe

A jar or two of maraschino cherries mix with walnuts in this unique quick bread recipe that is easy to make. Our Cherry Bread recipe is a special treat that is fun to add to cookie trays at the holidays or to share at Valentine’s Day.

Visually appealing with the distinct pink frosting colored from some cherry juice, slices of this bread quickly catch your eye.

Ingredients Needed To Make Cherry Bread

  • Jar of Maraschino Cherries – without stems is easiest to work with.
  • All-Purpose Flour
  • Milk
  • Light Brown Sugar
  • Butter
  • Eggs
  • Baking Powder
  • Almond Extract for the bread and Vanilla Extract for the icing
  • Salt
  • Walnuts – pieces or chopped walnuts blend in the bread better than whole walnuts
  • Powdered sugar
Ingredients to make cherry bread are flour, almond extract, brown sugar, vanilla extract, powdered sugar, walnut, maraschino cherries, baking powder, salt, eggs, butter and milk on a wooden counter top.

Step By Step Instructions

Prepare the jar of cherries by draining and reserving the juice. Set aside 2 tablespoons for the glaze.

Using the remaining juice add enough milk to make a cup of cherry milk.

Remove stems if necessary and cut cherries into quarters. Set aside.

In a large mixing bowl add flour, soft butter, cherry milk, brown sugar, almond extract, baking powder, eggs and salt.

Beat for 2 minutes or until well blended. Ensure there are no lumps and the pink color is even and smooth.

Stir in cherries and walnuts.

Divide batter evenly between two well greased loaf pans. I do not flour the pans as I have not found that method to be helpful.

Bake in an oven preheated to 350℉.

Test doneness by inserting a toothpick in the center. When it comes out clean the bread is done baking.

Allow bread to cool completely on cooling racks out of the loaf pans before mixing up the glaze.

Cherry Glaze Recipe

In a small mixing bowl beat together powdered sugar, milk, butter, cherry juice and vanilla extract.

Stir until smooth. Add a couple teaspoons of milk at a time to reach desired consistency.

I like to arrange loaves on serving trays and then spoon icing over the top.

Use a long bread knife to slice. We like to cut slices in half or thirds when taking to a potluck to share with others.

Use half green and half red maraschino cherries to add a special touch at the holidays.

Ingredients
  

Cherry Bread

  • 10 ounce jar maraschino cherries keep juice, divided
  • 1 3/4 cup all purpose flour
  • 1/2 cup milk
  • 1 1/2 cup light brown sugar packed
  • 1/3 cup butter softened
  • 2 eggs
  • 2 1/4 teaspoons baking powder
  • 1/2 teaspoon almond extract
  • 1/2 teaspoon salt
  • 1 cup walnuts chopped

Cherry Glaze

  • 1 cup powdered sugar
  • 1 tablespoon milk
  • 2 tablespoons butter melted
  • 2 tablespoons cherry juice
  • 1/2 teaspoon vanilla extract

Instructions
 

Cherry Bread

  • Coat two large loaf pans with non-stick cooking spray, covering the corners well.
  • Reserve juice while draining cherries. Set aside 2 tablespoons of juice for the icing. Using remaining juice add enough milk to make 1 cup of liquid.
    10 ounce jar maraschino cherries, 1/2 cup milk
  • Cut each cherry into quarters and set aside.
  • Beat flour, brown sugar, cherry milk, butter, eggs, baking powder, almond extract and salt until well blended.
    1 3/4 cup all purpose flour, 1 1/2 cup light brown sugar, 1/3 cup butter, 2 eggs, 2 1/4 teaspoons baking powder, 1/2 teaspoon almond extract, 1/2 teaspoon salt
  • Stir in cherries and walnuts by hand.
    1 cup walnuts
  • Bake for 40 – 50 minutes in a 350℉ oven. Bread is done when a toothpick inserted in the center of a loaf comes out clean. Allow loaves to cool for 10 – 20 minutes and flip to remove from the loaf pan.

Cherry Glaze

  • Combine powdered sugar, milk, melted butter, cherry juice and vanilla extract and beat until smooth.
    1 cup powdered sugar, 1 tablespoon milk, 2 tablespoons butter, 2 tablespoons cherry juice, 1/2 teaspoon vanilla extract
  • Drizzle over cool loaves of bread.
