No-Peek Chicken

Easily made in the oven or crock pot this No-Peek Chicken with wild rice recipe makes an easy meal with plenty of leftovers.

Layer the five simple ingredients in one pan or a slow cooker, cover with foil and don’t peek!  Come back in a couple hours and enjoy a DELICIOUS meal!

No Peek Chicken Recipe

Chicken is cooked to be so tender that no knife is necessary. As soon as the fork touches the chicken it easily shreds and mixes with the moist wild rice to add so much flavor to every bite! Creamy gravy with hints of mushroom and onion tie the entire meal together.

Easy chicken recipes keep our family full and happy during busy weeks. My son can be picky, but he loves eating a plain chicken breast out of the rice!  The rest of us love shredding the chicken up in the gravy and wild rice.

We make this recipe in one pan in the oven or in the slow cooker depending on our schedule. Just like our Crock Pot Chicken and Stuffing and Crock Pot Pork Chops with Mushroom Gravy one pan or one dish meals save so much time.

Tender baked chicken breasts shredded with rice and cream of mushroom soup, cream of celery soup and onion soup mix gravy.

If your people love all of the gravy, then you may want to go light on how much chicken you include so there’s a higher proportion of gravy.  If your people are picky and love the plain chicken, then use more chicken in your pan and there will be a lower ratio of gravy to chicken.

We’ve used both regular cream of mushroom soup and golden cream of mushroom soup. The flavor is very similar, but the color is different. Regular soup is more gray while the golden soup is more golden in color.

No-Peek Chicken in the Crock Pot

To convert this classic recipe to the crock pot mix up the dry rice, seasoning, cans of soup and water. Layer half of this mixture in a greased crock.

Lay chicken in a single layer on top and then cover with the remaining rice mixture.

The big decision is whether to use one can of soup water or one and a half cans of soup water. Less water means the rice will be ready to eat quicker. More water will take longer to absorb and is better for longer cooking times or if you don’t plan to eat as soon.

How Long to Cook Chicken & Rice in the Slow Cooker

Cook no-peek chicken and rice on low for 5 to 6 hours and cook on high for 3 to 4 hours in the crock pot. Chicken is safe to eat when cooked to an internal temperature of 165°F.

No-Peek Chicken and Wild Rice

Fewer dishes means less time spent dishwashing and more time spent smiling!  So this is a one pan meal for the win in our family! Serve with a salad and this is a complete meal!

We just use a basic 9×13 glass pan that’s economical and has a lid.  The lid makes putting leftovers in the refrigerator so easy!

We like to use Campbells cream of mushroom soup, Lipton’s onion soup mix, and Uncle Ben’s wild rice mix.  The name brands tend to pack more flavor in the spices which makes the one-dish meal even better.

Prefer not to use a box of wild rice, then use about one cup of rice with seasonings in place of wild rice.

Another one pan meal with rice that we enjoy is our Chicken Supreme, Sausage Link, Broccoli and Rice and Country Style Ribs and Rice in a Slow Cooker in the crock pot.

Chicken Casserole

My mom shared this no-peek chicken casserole recipe with me. She said she really likes this chicken dish and thought we would too.  She’s right!

Back in the last century, people who were running for county commissioner or other county administrative roles would hand out some of their family’s best casserole recipes on the campaign trail.

Wouldn’t it be great now if people spent money sharing their family’s tried and true favorites as opposed to running all of these smear campaigns?

Ingredients Needed:

  • Chicken breasts
  • Box of Uncle Ben’s Wild Rice
  • Can of cream of mushroom soup
  • Can of cream of celery soup
  • Packet of onion soup mix
  • Water

How to Make No Peek Chicken

The oven version doesn’t require quite as much mixing ahead of time as the crock pot.

Sprinkle rice and seasoning in the bottom on a greased baking dish. Lay chicken breasts on top.

Mix up soup, onion soup mix and water. Pour over chicken breasts.

Cover with foil and make prepare yourself – NO PEEKING!

Remove from the oven and let rest for a few minutes before serving.

Ingredients

  • 3 – 4 chicken breasts defrosted
  • 1 box Uncle Ben’s Wild Rice with Herbs
  • 1 can cream of celery soup
  • 1 can cream of mushroom soup
  • 2 scant cans water
  • 1 package onion soup mix

Instructions

  • Grease 9×13 pan.  Preheat oven to 350°F.  
  • Sprinkle box of rice in pan.  Lay skinned chicken on top.  Do not overlap.
  • Mix remaining ingredients and pour over top.
  • Cover pan securely with aluminum foil and bake at 350°F on upper rack in oven for 2 hours.  DON'T PEEK!!!  Use meat thermometer after 2 hours to confirm that chicken has reached internal temp of 165°F.  Enjoy!

Notes

When using a crock pot mix all ingredients together, layer half of mixture, chicken and then pour remaining mixture on top.
Use 1 to 1 1/2 cans of water in the crock pot depending on cooking time.
