Slow Cooker Rice Casserole
As farmers, we are active in organizations like the Farm Bureau. Our whole family volunteered at a breakfast that our county Farm Bureau coordinated. There were lots of leftover cooked sausage links, so the volunteers each took a bag home.
I chopped the cooked sausage links into smaller bite-size pieces and included them in this slow cooker rice casserole. Onions add great flavor to the dish and we had some mushrooms on hand so I tossed those in too. A variety of fresh and frozen vegetables would taste great.
Using uncooked rice and cooked sausage makes this rice casserole recipe so easy! Any kind of sausage could be used, ground sausage could be crumbled, patties could be cut up, just be sure the sausage is cooked. Mix the ingredients together, cover and cook on high for 2 to 3 hours. My husband said, “This recipe is good enough to take to a potluck and make a nice side dish that people would eat.” I always ask for his insight on recipes and he only shares concise, straight forward thoughts.

Sausage Link, Broccoli and Rice Crock Pot Casserole

- 1 – 2 cups sliced sausage links pre-cooked
- 1 small onion diced
- 1/4 cup butter melted
- 1 1/2 cups quick-cooking rice
- 2 cups water
- 1 cup fresh mushrooms sliced
- 1/2 teaspoon salt optional
- 1 can cheddar cheese soup
- 1 pound frozen broccoli chopped
Instructions
- Combine all ingredients in a greased crock pot. A 6 quart or 8 quart slow cooker works well. Cover and cook on high for 2 to 3 hours.
