Parmesan Roasted Zucchini

Our Parmesan Roasted Zucchini has an extra pop of flavor to enhance this basic vegetable in a wonderful way!

Easy Roasted Zucchini Recipe

Roasting zucchini and adding parmesan cheese creates a basic side dish that goes well with most meals. We especially enjoy serving this recipe with Smoked Chicken or grilled burgers.

A little oil, Italian seasoning, garlic powder, salt and pepper can really amp up the flavors in fresh zucchini. We know that eating simple vegetables helps build a healthy menu.

Some of our favorite dishes with roasted vegetables are Parmesan Roasted Cauliflower, Air Fryer Sweet Potato Cubes and Roasted Kielbasa and Potatoes.

Ever since adding white cheese to our popular Zucchini Casserole to create this Zucchini Hamburger Casserole I’ve been craving more of the delicious cheese and veggie combo.

Zucchini Sticks Vs. Slices

Long sticks of zucchini fries create more of a finger food or appetizer type option where the slices or coins are better suited to use a fork and eat as a side dish.

The parmesan cheese did seem to stick to the coins better. Otherwise we have no preference on how to cut the zucchini to roast.

Time in the oven is based more on thickness than overall shape.

Ingredients Needed

  • Zucchini – 1 to 3 young zucchini work well in this recipe.
  • Avocado Oil – Can substitute olive oil if necessary.
  • Italian Seasoning – Adds some dimension to the watery veggies.
  • Garlic Powder
  • Salt and Pepper – We like to keep the grinders on hand with sea salt and black pepper.
  • Parmesan – Freshly is best, but shredded or a can of grated cheese work fine too.
Ingredients to make parmesan roasted zucchini are fresh, young zucchini, Italian seasoning, garlic powder, salt, pepper, olive oil and parmesan cheese on a wooden counter top.

Serve with Marinated Tomatoes and a big batch of Black Bean Salad for a wonderful summer meal!

How To Roast Zucchini With Parmesan

Wash zucchini and cut into 1 inch thick, uniform slices.

Toss with oil.

Olive oil, Italian seasoning, salt and pepper poured over thick slices of zucchini in a medium sized white mixing bowl.

Then mix up all seasonings except the cheese and toss again.

Arrange in a single layer, evenly spread out on a baking sheet.

Set in an oven preheated to 350F. Our oven has the roast setting, so we use that. If that setting is not available bake works fine.

Roast for 10 to 12 minutes. Then remove tray from the oven and turn the oven to broil.

Sprinkle cheese over the zucchini. Slices can be pushed together to make it easier to add cheese if desired.

Return to oven for 3 to 5 minutes until the parmesan cheese is golden brown.

Recipe Tips

  • Fresh, young zucchini will taste much better than large mature zucchini that have larger seeds and much more water that will need to cook out in the roasting process which takes more time. 
  • How much zucchini is on the baking sheet affects roasting time more than rather it’s cut into slices or fries.
  • If the sheet has a single layer with space for air to flow between the pieces it will roast more quickly than than if the pieces are super close and
  • Spread out pieces that are evenly spaced will allow more air flow verses piled up and really close together veggies.

How To Reheat

Reheat zucchini in a 350°F for 5 to 7 minutes.

This recipe reheats well and is very enjoyable later in the week.

Ingredients
  

  • 3 zucchini
  • 1/4 cup avocado oil
  • 1 tablespoon Italian seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon sea salt
  • 1/2 teaspoon black pepper
  • 1/3 cup Parmesan cheese

Instructions
 

  • Preheat oven to 350℉ on roast setting or bake setting.
  • Cut zucchini into 1" thick slices.
  • In a mixing bowl toss zucchini in oil.
  • Mix together Italian seasoning, garlic powder, salt and pepper and sprinkle over zucchini. Toss again.
  • Arrange slices in a single layer on a baking sheet and place in oven for 12 minutes.
  • Remove tray and turn oven to broil.
  • Sprinkle parmesan cheese on top and set in the oven for 3 to 5 minutes until cheese is golden brown.
