Our family loves this Farmhouse Carrot Bread Recipe that tastes sweet and has two cups of carrots in each loaf.

The cinnamon flavor stands out and makes this easy quick bread perfect to enjoy at breakfast, brunch or for a snack.  Spread some real butter on a warm slice of bread and this is the easiest way to eat more vegetables for breakfast!

Carrot Bread Recipe

Soft and sweet, every tender morsel of this Carrot Bread Recipe leaves me craving more.  I never knew a traditional vegetable could make bread taste so good! This bread, our Carrot Cake Loaf or Cream Cheese Carrot Cake Muffins are great recipes to use up extra carrots that you may have.

The first time I ate this old-fashioned homemade carrot bread I thought of a local restaurant chain.  I was so proud that I made a restaurant-quality quick bread at home!  The sweet cinnamon flavor and moist, tender texture makes this bread so memorable.  Add a layer of room temperature butter and one slice isn’t enough!

My favorite place to try new flavors of quick bread is Bob Evans restaurants.  They always have some staple quick breads on the menu as well as seasonal favorites like Pumpkin Spice Bread.  Every time we eat there I want to try the latest quick bread.  I love their blueberry bread, strawberry bread and Banana Pecan Bread.  Our Farmhouse Carrot Bread may be the next seasonal bread on the menu – it’s truly that good!

Since I associate Bob Evans breakfast and brunch with a piece of delicious quick bread, that’s my favorite time to eat this beautiful bread.  My family also enjoys snacking on carrot bread.  Anything that helps us eat more vegetables and boost our fiber intake is a win in my book!

How to Make Carrot Bread

  1. Mix brown sugar, granulated sugar, eggs and oil.
  2. In a separate bowl mix dry ingredients.  Slowly stir into wet mixture.
  3. Stir in carrots.
  4. Divide batter evenly between 2 loaf pans that have been greased and floured.
  5. Bake in a 350°F oven for 1 hour until a toothpick inserted in the center comes out clean.

Tips for Making Homemade Carrot Bread

  • Do not over mix bread as too much air will be released
  • Use the listed amount of leavening agents (baking powder and baking soda) – using too much or too little may cause the loaf to be too dense and flat
  • Grated carrots should be evenly sized to best mix into the loaf
  • We use this brand of grater for great results
  • Carrots will be visible in each slice to evenly sized pieces will increase the visual appeal

When we get a huge bag of carrots from Sam’s Club I like to use part of the bag for Carrot Salad with Celery and Mangos and make some bread with the rest.

Can Carrot Bread Be Frozen?

Yes!  Once cooled, carrot bread can be wrapped in plastic wrap and then placed inside of a zip lock bag.  Carrot bread should be used within three months for maximum quality.

How Do You Keep Carrot Bread Moist?

Always store bread in a sealed airtight container, ziplock bag or wrapped well in foil or plastic wrap.  Storing bread in the refrigerator can help extend shelf life.  Refrigerated carrot bread is best when used within 5 days or less.  Regardless of how it is stored carrot bread may start to taste stale after 5 days.

The amount of moisture in the carrots will likely keep the bread moist for days.

What Can I add to Carrot Bread?

Bananas, apples, coconut or nuts can all be added to carrot bread to create a more diverse flavor profile.  Cream cheese icing could also be added in place of using butter.  Adding icing would definitely make this a very sweet dessert bread.

Ingredients

  • 1 cup brown sugar
  • 1 cup granulated sugar
  • 4 eggs
  • 1 1/2 cups oil
  • 3 cups flour
  • 2 teaspoons baking powder
  • 1 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 teaspoon allspice
  • 2 teaspoons cinnamon
  • 4 cups fresh grated carrots

    Simple and easy to make. Moist with great flavor. I put mine in a Bundt pan and it came out awesome. I sprinkled with powdered sugar. I cooked it fit about an hour and 10 mins. I would def make this again.

    Which side of the grater should I use for best results large or small?b

      Great question! We use the large side of the grater. I think the small side would take too long to get it all shredded.

    Great spice to sweetness balance. I added 2 T raisins. I mixed the carrots and raisins in 1/3 c of the dry ingredients. My family beggef for a second slice of this.

    Do you bake both loaves at the same time or separately? Do they freeze?

      Yes, I do bake both loaves at the same time. I would wrap in a paper towel in an airtight bag before freezing. Hope you enjoy the bread 🙂

      Yes! Half a cup would work well or you could increase the amount if you really like walnuts 🙂

    I tried this and loved it!!!! Could I substitute 1/2 cup applesauce for part of the oil?

    I made this today my husband and I almost ate a half loaf for dessert after dinner!! I tweaked it with coconut oil and applesauce and Sweet gourmet brand bran for health properties. Also a little ginger, nutmeg and orange juice to help moisten the bran. My husband printed out the recipe and tole me to make notes of all the changes because that was the best bread he has ever had! 2 thumbs up!!! Thank you for the bread recipe and the inspiration!!
