Gluten Free Peanut Butter Cookies with a Chocolate Kiss

When an aunt shared this super EASY recipe as a gluten-free cookie option I knew we had to try it!

These peanut butter cookies technically have 3 ingredients with the chocolate kiss on top making the 4th ingredient.

This recipe is super delicious and just like our Lemon Cake Cookies only takes 5 minutes to mix up.  Having friends and family that need gluten-free foods I’m glad to add this recipe to our collection!

3 or 4 Ingredient Peanut Butter Cookies

Brown sugar, crunchy peanut butter and eggs mixed together with a chocolate kiss set on top after the cookies are done baking.  This is the EASIEST cookie I have ever made.  And it is so delicious!  These peanut butter cookies lack nothing for flavor!

I love my husband’s aunts and uncles, they truly help and support us in countless ways.  One of them came to our house to visit my husband when he came home from the hospital and shared this recipe with us.  She said it’s a 3 ingredient peanut butter cookie and then you put a chocolate kiss on top

My husband maintains this is a 3 ingredient cookie and the kiss is a topping.  I think the kiss should be counted as the 4th ingredient.

Easy Gluten-Free Cookie Recipe

I believe these cookies have four ingredients including chocolate, but can be made as a 3 ingredient cookie.  However, you count there’s a good chance you already have the ingredients on hand.  Kisses could be substituted for a few milk chocolate baking chips.  This gluten free cookie recipe can be made in a small batch to get 15 cookies.  It can easily be doubled or tripled to make 30 to 45 cookies.

So far our immediate family has been spared from gluten allergies, but we have extended family and friends that are always on the hunt for gluten-free foods.  I’ll admit that I haven’t tried as hard as I should to help accommodate other’s needs in this area.

I have a Bible study friend that can’t eat any gluten without severe pain and this will be the easiest recipe to make for her. Sometimes we’ve shared gluten free recipes that lacked some eating enjoyment, but everyone in our group will enjoy these cookies because the flavor and texture is great!

The first time we made these cookies was to take to a birthday party and OSU tailgate party.  Right away there was a little girl who couldn’t eat the cake and cupcakes because of a gluten allergy.  Her family was grateful to have the cookies.

Storing and Freezing

  • Store these cookies in an airtight container for up to a week on the counter
  • Cookies don’t have ingredients that will dry out or get stale quickly which helps increase shelf life
  • Dough can be made into balls and frozen in a freezer bag or container; just bake frozen dough a minute or two longer
  • Baked cookies can be frozen, but it can be difficult to keep the kiss from getting broken in the freezer

Tips for Making 3 Ingredient Cookies with Brown Sugar

  • Recipe is very easy to scale, it can easily be cut in half or doubled
  • Unwrap kisses and have ready while cookies are baking, but keep them away from the stovetop to prevent melting
  • Place the chocolate kiss on top of the cookie about 2 – 3 minutes after baking
  • Placing the kiss immediately may make it melt, waiting too long will make the cookies crack if they’re already begun to set up
  • A few milk chocolate chips can be substituted for a chocolate kiss
  • Creamy peanut butter can be substituted for crunchy peanut butter
  • Even though these cookies are gluten-free, that does not mean they are healthy as there is still a lot of sugar in the recipe

How to Make Peanut Butter Blossoms

  1. Mix brown sugar, crunchy peanut butter and eggs
  2. Use a cookie scoop to drop onto a baking sheet
  3. Bake at 350ºF for 6 to 8 minutes
  4. Place a chocolate kiss on top 2 – 3 minutes after removing from the oven

Ingredients
  

  • 2 cups brown sugar
  • 2 cups crunchy peanut butter I use a 16 ounce jar
  • 2 eggs
  • 30 milk chocolate kisses

Instructions
 

  • Mix brown sugar, peanut butter and eggs well.
  • Drop onto a lightly greased baking sheet and bake for 6 to 8 minutes at 350°F.
  • Gently place a chocolate kiss in the center of each cookie 2 – 3 minutes after coming out of the oven.
