Our family has recently had a strong motivation to eat more fruits and vegetables so these type of recipes are taking center stage.  We like to make a big batch and put several containers in the freezer so that we’ve got a meal ready to go at any time.

Why This Recipe Works

  • Ground beef can be browned ahead of time in big batches to save time with meal prep.
  • Homemade vegetable beef soup freezes well, so use extra vegetables from the garden to make meals that can be reheated in cooler months.
  • This is one of those old fashioned vegetable soup recipes that my mom pulled out of her vault and it’s so delicious!
  • We all love homemade meals and this is a classic soup for us!  Our family already enjoys Pasta E Fagioli, Ham and Potato Soup, and Chili with Tomato Juice so adding this soup recipe with hamburger to our menu rotation has been great!

In The Crock Pot

Cover crock pot and set to low for 4 to 5 hours or cook on high for 3 to 4 hours.

Tender cooked potatoes, cabbage, other vegetables and ground beef in a slow cooker to make a delicious homemade soup.

Stove Top

Cover and simmer on low on the stove top for about an hour. The soup is done when the potatoes and cabbage are tender.

Recipe Tips

  • Frozen hash browns and veggies or canned vegetables save time chopping. We typically use our homegrown frozen sweet corn.
  • Add desired amount of beef broth, vegetable stock or water so that all veggies are submerged and can cook in liquid.
  • Yukon gold potatoes don’t need peeled, where a brown Idaho potato needs to be peeled.
