Vegetable Beef Soup with Cabbage Recipe
This healthy, yet hearty old fashioned vegetable beef soup with cabbage and potatoes is a broth based soup that my family really enjoys!
Ground beef, cabbage and potatoes are the key ingredients, while tomatoes, onion, celery and corn add more color and fill out every bite.
We have a freezer full of farm raised beef that we enjoy in a one pot recipe like this that blends protein and vegetables so well. Lean beef also tastes great in our Beef Noodle Casserole and Cream Cheese Stuffed Peppers.
Our family has recently had a strong motivation to eat more fruits and vegetables so these type of recipes are taking center stage. We like to make a big batch and put several containers in the freezer so that we’ve got a meal ready to go at any time.
Vegetable Beef Soup is a perfect recipe to use leftover cabbage from a Beef and Cabbage Skillet or Smoked Sausage and Cabbage meal.

Ingredients Needed to Make Hamburger Vegetable Soup
- Hamburger
- Onion
- Cabbage
- Potatoes
- Tomatoes
- Celery
- Corn, fresh or frozen
- Peppers are optional
- Beef bouillon, we prefer Better Than Boullion
- Water
- Salt
- Pepper

How to Make Old Fashioned Vegetable Soup with Cabbage
- In a skillet, brown ground beef and onion until done and then drain.
- Boil one cup of water in a dutch oven and stir in Better than Boullion flavoring or bouillon cubes.
- Add beef and onion mixture and remaining ingredients.
- Add enough extra water to cover vegetables. Bring to a boil and then turn down to a simmer.
- Keep pot covered and stir occasionally until vegetables are tender.
Step By Step Instructions
Brown ground beef and drain.
While beef is browning work on chopping vegetables and add to a lined or lightly greased slow cooker.
Add cooked and crumbled beef to the crock pot.
Add seasonings. I like to sprinkle freshly ground pepper and sea salt over the top.
Add beef broth or enough liquid to cover the vegetables.
Adding water is an option to thin the soup, but I typically add a mixture of vegetable stock or beef broth.
In The Crock Pot
Cover crock pot and set to low for 4 to 5 hours or cook on high for 3 to 4 hours.
Stove Top
Cover and simmer on low on the stove top for about an hour. The soup is done when the potatoes and cabbage are tender.
Recipe Tips
- Frozen hash browns and veggies or canned vegetables save time chopping. We typically use our homegrown frozen sweet corn.
- Add desired amount of beef broth, vegetable stock or water so that all veggies are submerged and can cook in liquid.
- Yukon gold potatoes don’t need peeled, where a brown Idaho potato needs to be peeled.

- 1 1/2 teaspoons beef flavored Better than Boullion
- 5 cups potatoes diced
- 4 cups tomatoes diced
- 3 cups cabbage cut in bite sized pieces

- 1 cup frozen corn
- 1 teaspoon salt
