Easy Recipe with Golden Grahams Cereal

Our eleven year old has been begging to have a campfire and make since school has been out.  The challenge is we’ve either been in the field working long days so we’re too tired or it’s raining every time he asks.  Every time he asks I begin craving this perfect summer treat.  So, I converted our Unicorn Rice Krispie Treats made with Lucky Charms into Smores Bars!  Regardless of the weather these Golden Grahams Smores Bars can be made and enjoyed!

With kids, we always have cereal around since it can be eaten for any meal (in a pinch) and makes easy snacks.  When I have a little extra time and energy I like to make cereal bars with marshmallows because my kids love them!  I also love how well these snacks freeze since we don’t need to eat the entire pan at once.

Are These Cereal Bars with Marshmallows Messy?

Yes!  And that’s my favorite part!  Several of us love eating these treats with our fingers, but know that this recipe is very gooey!

This recipe can be made less gooey by leaving out the marshmallow creme OR by increasing the amount of cereal used.  Another favorite s’mores treat that must be eaten with a fork is our Easy S’mores Bars.  So YUMMY!

My husband is a farmer and I had just finished taking pictures of these beautiful S’mores Cereal Bars when he called.  He was in a tractor putting fertilizer on young corn plants and a bolt had broken.  So I picked him up and took him to the shop to get the parts he needed.  I very proudly loaded a freshly photographed plate on cereal bars along with our kids in our minivan.  I presented the snack to him and he said, “If I made these for my kids I would be mad because they’re so messy.”

I acknowledge that he was grumpy and would rather be getting work done than fixing things that break.  Sometimes parts of any job just stink and that’s where he was at.  The moral of the story is that these are messy and they may not make you happy if you’re grumpy.

How to Make Indoor Smores Treats

  1. Melt butter in a large pan, when it is nearly melted add the marshmallow creme and stir
  2. Once butter and marshmallow creme are combined add half of the marshmallows and keep stirring
  3. When marshmallows are nearly melted remove from the heat and stir in cereal
  4. Once cereal is well coated add chocolate chips and remaining marshmallows and stir well
  5. Spread into a greased 13 x 9 inch pan and smooth out the top with wet fingers
  6. Sprinkle pieces of Hershey chocolate bar on top

Tips for Making S’mores Cereal Bars

  • I rarely ever say this, but this is one recipe that I can’t tell the difference between using butter or margarine
  • Marshmallow creme can be left out to decrease gooeyness
  • Amount of cereal can be increased to decrease gooeyness
  • More chocolate chips can be mixed in or sprinkled on top to increase chocolate flavors
  • Marshmallow is the dominant flavor in this recipe, so adjust ingredients as desired
  • Use wetted fingers or a butter wrapper to smooth out the top of the bars
  • Don’t worry about getting the marshmallows totally melted on the stove, there is plenty of heat to keep melting later on
  • These bars freeze well

Indoor Smores Cereal Bars

Ingredients
  

  • 5 tablespoons butter
  • 8 cups Golden Grahams cereal
  • 3.5 ounces marshmallow creme 1/2 small container
  • 10 ounce mini marshmallows
  • 3/4 cup semi-sweet chocolate chips
  • 2 Hershey Bars broken into pieces, optional

Instructions
 

  • Melt butter in a large dutch oven over medium heat.  Once the butter starts to melt, add the marshmallow creme. Over low heat, stir to combine.
  • When butter and marshmallow creme are combined add 5 ounces of regular mini marshmallows.  Stir to combine.
  • When the marshmallows are nearly melted remove from heat and add the cereal about four cups at a time. Stir well. Add chocolate chips and remaining marshmallows, stir well.
  • Pour into a 9×13 pan.  Wet hands and smooth out the top or pat down with the butter wrapper.  Sprinkle Hershey bar pieces over the top. Cool before serving.
