Oatmeal Fruit Bars

Filled with a can of cherry pie filling baked between layers of a simple oatmeal mixture, our easy Oatmeal Fruit Bars make a great dessert.

Reminiscent of Nutrigrain bars, we love the earthy flavor from oats and sweet filling in this super easy recipe that’s also known as old fashioned Fruit Bars and Cherry Oatmeal Bars

A whole grain treat with a sweet flair, these are heartier than our more refined Jam Crumble Cake, but similar to these Oatmeal Thumbprint Cookies. Any flavor of pie filling works fine in this recipe.

Our Oatmeal Fruit Bar recipe only takes ten minutes to whip up. Taking the pictures actually took more time than making the recipe – and those are my favorite kind of desserts to share!

Ingredients Needed

  • Quick oats – these are the thinner, further processed oats – not old-fashioned oats.
  • All-Purpose Flour
  • Brown Sugar
  • Butter
  • Baking Soda
  • Salt
Ingredients to make Oatmeal Fruit Bars are flour, baking soda, salt, quick oats, butter, brown sugar and a can of cherry pie filling on a wooden counter top.

How To Make Fruit Bars

Blend brown sugar and softened butter together thoroughly.

In a separate dish stir together flour, salt and baking soda. Slowly stir into butter mixture.

Add oats and stir until crumbly.

There should be about 4 cups – take half of this mixture and press into the bottom of a 9 x 13″ pan until level.

Spoon that can of beautiful cherry pie filling over the top.

Through testing we learned that pouring in one spot and spreading is not good as it will pull up pieces of the bottom layer. So carefully spoon and having a few spots of the oat mixture showing is fine.

Spread the remaining oat mixture on top and gently press down to level.

Bake the oatmeal fruit bars for about 25 minutes in an oven preheated to 400℉ until the top is lightly golden brown.

Oatmeal Fruit Bars

Ingredients
  

  • 3/4 cup butter softened
  • 1 cup brown sugar packed
  • 1 3/4 cups all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 1/2 cups quick oats
  • 21 ounce can cherry pie filling

Instructions

  • Preheat oven to 400℉.
  • In a medium sized bowl mix butter and sugar thoroughly.
    3/4 cup butter, 1 cup brown sugar
  • In a small dish stir together flour, salt and baking soda.
    1 3/4 cups all-purpose flour, 1 teaspoon salt, 1/2 teaspoon baking soda
  • Stir in oats and mix until crumbly.
    1 1/2 cups quick oats
  • Press half of the crumbs (2 cups) into the bottom of a greased 9 x 13" baking pan. Press flat with your fingers.
  • Spoon pie filling over the oats as evenly as possible and cover with remaining crumbs, gently pat the top to flatten.
    21 ounce can cherry pie filling
  • Bake in a preheated oven for 25 minutes. Cool and cut into bars, enjoy!
