White Chocolate Cupcakes

Our White Chocolate Cupcakes start with a simple box of cake mix and get an upgrade from white chocolate pudding and white chocolate chips. The result is a moist, bakery style cupcake that’s easy enough for everyday baking and special enough for birthdays and celebrations.

Why I This White Chocolate Cupcake Recipe

Inspired by our fan favorite Chocolate Cake with Pudding Mix and Cake Mix Cupcakes, this white chocolate version combines a white cake mix and white chocolate pudding, then adds white chocolate chips to create an indulgent twist. 

The first time we made these we used Disney’s Frozen themed cupcake liners and sprinkles for our daughter’s 2nd birthday, so they will always hold a special place in my heart. White Chocolate desserts fit with a “frozen” theme well.

As a big kid she made these cupcakes for the 4th of July and topped with a simple red, white and blue icing.

Ingredients Needed:

  • White Cake Mix – we use Duncan Hines
  • White Chocolate Pudding mix – only use instant pudding
  • Eggs
  • Sour Cream
  • Water
  • White Chocolate Chips – we love Ghirardelli for a premium flavor
Ingredients to make white chocolate cupcakes are classic white cake mix, white chocolate jello, eggs, vegetable oil, white chocolate chips and sour cream on a wooden counter top.

4th of July Cupcakes

To make Fourth of July cupcakes place the icing bag with tip inside your hand and fold the excess down over your thumb and forefinger. Use a toothpick to make alternating, thin stripes of red and blue from the tip up the sides of the icing bag.

Add white icing, filling the bottom of the bag tightly. As you squeeze white frosting through the bag there will be pastel blue and red stripes making a fun and easy way to decorate for Independence Day. Squeeze frosting into your preferred pattern on the cupcake.

After spending time and effort to decorate these cupcakes we like to use these storage containers to better protect them.

Step By Step Instructions

Using an electric mixer stir together cake mix, instant pudding mix, eggs, sour cream, vegetable oil and water.

Use a cookie scoop or tablespoon to add about 1 1/2 tablespoons of batter to each cupcake liner in the baking pan.

Then add a layer of white chocolate chips.

We tested mixing the chocolate morsels into the batter, but they tend to sink to the bottom and burn. By experimenting we learned that layering the chips in the batter creates a better texture with just a little extra effort.

Use a spoon or cooking scoop to top with remaining batter.

The batter doesn’t need to be smooth. It will rise while baking and create a nice finished top.

Bake in an oven preheated to 350℉ for 20 – 28 minutes until a toothpick inserted in the center comes out clean.

The cupcakes will have a slight yellow tint because the recipe uses four whole eggs. For a pure white cupcake, use 6–8 egg whites instead and omit the yolks, which contribute the yellow color.

Ingredients
  

  • 15.25 ounce box White cake mix
  • 3.3 ounce box white chocolate instant pudding mix
  • 4 large eggs
  • 1 cup sour cream
  • 1/2 cup warm water
  • 12 ounces white chocolate chips

Instructions

  • Preheat oven to 350℉.  Add 24 cupcake liners to muffin tins.
  • Mix all ingredients except chocolate chips well.
    15.25 ounce box White cake mix, 3.3 ounce box white chocolate instant pudding mix, 4 large eggs, 1 cup sour cream, 1/2 cup warm water
  • Use a large cookie scoop or tablespoon to fill cupcake liners 1/3 full.
  • Then sprinkle a few white chocolate chips over the batter.
    12 ounces white chocolate chips
  • Top with remaining batter. Liners should not be more than 3/4 full.
  • Bake for 20 – 28 minutes.  These taste great with or without icing!

Notes

  • The pudding makes these cupcakes so moist, but it also means the cupcakes take longer than normal to bake
  • Baking times vary, so I use a toothpick to test the cupcakes a couple of times to prevent burning
