Keto Ground Beef and Bacon Casserole

Keto Ground Beef Casserole

This easy casserole recipe combines classic ground beef with common vegetables and cream to make a rich and slightly crunchy base layer. The shredded cheese and bacon on top make the casserole taste amazing! Adding taco seasoning makes a taco flavored keto casserole.

I took this Bell Pepper Taco Dip to a party a few years ago and a friend asked for the recipe so she could make a keto ground beef casserole. This inspired me to do the same! Just like our taco dip this casserole could be eaten with Doritos or tortilla chips to make a nice dip.

Since our Keto Sausage & Cream Cheese Stuffed Peppers are so popular I knew that taking inspiration from that recipe would make this casserole even more delicious.

Like most recipes, this one is very easy to customize. Mushrooms could be added. More onion and cream cheese would make more crunch and cream in each bite. And if you’re all out of bacon this casserole tastes great with ground beef, cheese and vegetables alone.

We like to grow peppers in our garden and freeze strips or chopped peppers. Extra defrosted peppers work but may be soggy or have extra water in the defrosting process. Just be sure to spend a little extra time cooking off the moisture in the skillet.

Ingredients in Low-Carb Hamburger Casserole

  • Lean ground beef
  • Cream cheese
  • Taco seasoning
  • Green bell pepper
  • Tomato
  • Onion
  • Shredded Mexican cheese
  • Chopped bacon or bacon bits

Step-By-Step Keto Ground Beef Casserole Recipe

In a skillet over medium-high heat brown the ground beef. Drain the skillet and allow the hamburger to sit on a paper towel covered plate.

Add the chopped vegetables to the skillet.

Allow vegetables to cook until the liquid simmers off and the vegetables are a little bit tender.

Once the vegetables are done cooking layer in the bottom of a 9×13 inch skillet.

Return the ground beef to the skillet and stir in taco seasoning and cream cheese.

Spoon the creamy ground beef mixture over top of the vegetables in the baking dish.

Sprinkle cheese and bacon overtop and bake at 350°F for 10 to 15 minutes until the cheese is melted and the dish is warmed through.

When To Brown the Ground Beef

Ground beef needs to be browned or cooked through before being added to this casserole. Otherwise it would be too difficult to determine when the meat is done cooking.

When cooking ground beef the goal is to cook over medium heat in a skillet and stir often until the pieces of meat are a similar size and red or pink is no longer visible in the meat.

When cooking a big piece of meat always use a digital meat thermometer to determine doneness. But you need surface area in the meat for a thermometer to work, so a meat thermometer does not work with ground meat.

Tips for Making Ground Beef & Veggie Casserole

  • Use a full block of cream cheese to make this casserole and easier to dip with chips
  • As a dip tastes great served with Doritos or tortilla chips
  • Brown ground beef before adding to casserole
  • Mushrooms can be added
  • Ground beef or hamburger can be substituted for Italian sausage (omit taco seasoning) or plain sausage with taco seasoning added

Ingredients

  • 1 pound lean ground beef
  • 2 tablespoons taco seasoning
  • 4 ounces cream cheese cubed
  • 2 large green bell peppers coarsely chopped
  • 2 medium tomatoes diced
  • 1 small onion chopped
  • 2 cups Mexican cheese
  • 1/2 cup bacon bits

Instructions

  • In a skillet brown ground beef. Drain and set aside on a paper towel covered plate.
  • Add pepper, onion and tomatoes to a skillet and cook over medium heat until onions and peppers begin to become tender. Much of the liquid, especially from the tomatoes should cook off during this time.
  • Arrange cooked vegetables in the bottom of a 9 x 13 inch baking dish and preheat oven to 350°F.
  • Return ground beef to skillet and sprinkle taco seasoning over the top. Add cubes of cream cheese and stir until everything is cooked.
  • Spoon creamy ground beef layer as evenly as possible over top of the vegetables.
  • Sprinkle cheese and bacon on top and bake for about 10 minutes until the cheese is melted and the dish is warmed through.
