Breakfast Casserole With Croutons

A classic breakfast combines sausage, egg and cheese with a simple addition to make a delicious Breakfast Casserole with Croutons.

Add a thin layer of cream of mushroom soup and milk on top for an easy gravy flavor to compliment this egg bake with croutons.

Overnight Egg Bake With Croutons Recipe

Our family loves a traditional breakfast with sausage and eggs. One of our most popular recipes is Egg and Sausage Casserole, but adding croutons and cream of mushroom soup for a little gravy flavor takes the basic breakfast casserole up a notch.

My mom gave me a collection of recipes from 4-H contests in the 90s.  After some adjustments, this Breakfast Casserole With Croutons recipe has been added to our list of favorite breakfast and brunch recipes with meat and eggs.    

The addition of cream of mushroom soup to the top of this sausage casserole because it adds a little bit of gravy flavor without being as intense as our Sausage Biscuit and Gravy Casserole.

Sometimes I mix this breakfast recipe with sausage and eggs up at night for a breakfast or brunch, but other times I mix it up in the morning while we’re getting ready for work and waiting for the school bus. Just cover and pop it in the refrigerator and bake it for dinner.  Whenever we eat it, we like it and that’s what matters!

Why This Breakfast Casserole Recipe Works

  • Protein packed recipe that is a great way to use up a lot of eggs and make a delicious meal.
  • Serve with fresh fruit salad made from strawberries, blueberries, melon or pineapple and an easy meal is on the table.
  • I love that it’s so easy to mix up and is an overnight casserole which makes kitchen cleanup easier.

Ingredients Needed

  • Sausage – We typically buy Bob Evans sausage, but we have a recipe to make Homemade Breakfast Sausage out of ground pork.
  • Croutons – Plain or lightly seasoned work best.
  • Cheddar Cheese – We like sharp cheddar and use shredded cheese for ease of melting.
  • Eggs – Large white eggs are our preference and the best value.
  • Dry Mustard – A mild seasoning that adds to the recipe, even if you don’t enjoy mustard still include it.
  • Milk – Divided between the recipe and casserole topping.
  • Cream of Mushroom Soup – Use half a can on a square baking dish or a whole can on a 9 x 13 dish with the recipe doubled.
  • Salt and Pepper – We like to add pepper, but find there’s usually enough salt in the sausage.
Ingredients to make a breakfast casserole are croutons, eggs, ground mustard, cream of mushroom soup, cheese, sausage and milk on a wooden counter top.

How to Make A Breakfast Casserole With Croutons

  1. In a skillet brown sausage and drain well.
  2. Grease an 8 x 8 inch baking pan.  Layer croutons, sausage and cheese in casserole dish.
  3. Beat eggs with dry mustard and 1 cup of milk; pour over layers.
  4. Cover and chill in the refrigerator for several hours or overnight.
  5. Mix soup and 1/4 cup milk in a small bowl and spoon evenly over top of casserole.
  6. Bake at 325°F for one hour. Let stand 10 to 15 minutes prior to cutting.

Can This Casserole Be Made Ahead?

Yes this casserole can be mixed up, covered tightly with plastic wrap and stored in the refrigerator over night or up to two days ahead of time. I find that foil can come lose much easier and then some of the moisture may dry out.

I prefer to leave the cream of mushroom soup topping off of the casserole and then apply when I’m ready to put it in the oven.

Set the cold dish out on the counter 30 minutes ahead of time to warm up before baking. Or set the cold dish in the cold oven and allow them to preheat and warm up together. Then bake as directed.

Step By Step Instructions

Cook, crumble and drain the sausage. This can be done a few days ahead to help with meal prep.

Preheat oven to 325°F.

Spread croutons in a somewhat even layer in the bottom of a lightly greased square baking dish.

Sprinkle sausage over the top.

Then add a layer of shredded cheddar cheese. Other flavors of cheese work well if you prefer to use a substitute.

In a small mixing bowl crack the eggs and scramble with a fork. Stir in milk, dry mustard, salt and pepper.

Then pour over the meat and cheese.

Cover tightly and chill for several hours or overnight to allow the croutons to absorb the moisture.

Adding A Little Bit of Gravy

Mix together half a can of cream of mushroom soup and 1/4 cup of a milk in a small mixing bowl.

Use a spatula or butter knife to spread out evenly over the top.

Bake for an hour until the top is lightly golden brown, the cheese is melted and the center of the casserole is set.

Ingredients
  

Sausage and Egg Bake

  • 1 pound sausage
  • 1 1/2 cup croutons
  • 1 1/4 cup cheddar cheese
  • 5 eggs
  • 1 teaspoon dry mustard
  • 1 cup milk

Casserole Topping

  • 5 ounces cream of mushroom soup 1/2 can
  • 1/4 cup milk

Instructions
 

  • Brown sausage and drain well.
  • Spray non-stick cooking spray in an 8×8 baking pan. Layer croutons, sausage and cheese in casserole dish.
  • Beat eggs with dry mustard and 1 cup of milk; pour over layers.
  • Cover tightly and chill in refrigerator for several hours or overnight.
  • Mix soup and 1/4 cup milk in small bowl and spoon over top.
  • Bake at 325°F for one hour. Let stand 10 to 15 minutes prior to cutting.

Our family loves a traditional breakfast with sausage and eggs.  This Farmhouse Egg and Sausage Bake satisfies all of those cravings and makes a delicious brunch, lunch or dinner casserole!  I love that it's so easy to mix up and is an overnight casserole with which makes kitchen cleanup easier.

    Hi there Jennifer, want to make Farmhouse Egg and Sausage bake but need to stretch for a crowd. 13 x 9 dish should be fine. Would you absolutely double everything to make this? Thanks for your reply to my email.
