Ingredients Needed And Substitutions:
- Cottage Cheese – full fat will give full flavor as an ingredient mixing with oats.
- Old Fashioned Rolled Oats – give a hearty flavor and structure to the pancakes – avoid quick oats is possible.
- Eggs – we use regular large white eggs.
- Baking Powder – this comes in a round can and is different than baking soda in a box.
- Vanilla Extract – enhances all of the flavors.
Step By Step Instructions
Measure all ingredients into a blender or blender cup. Secure the lid or blades.
Turn on until well blended.
I do not preheat the skillet, but I do coat with non-stick spray or use a pat of butter to grease the pan.
Once the pancake has little bubbles across most of the surface use a spatula or tuner to flip.
The second side won’t take as long as the first side.
As the skillet warms up each batch of pancakes will cook a little bit more quickly. Stay close to the stove to get a perfectly golden brown cottage cheese oatmeal pancake.
Serve with fruit and peanut butter dip for a delicious brunch!
