These Oatmeal Cottage Cheese Pancakes are easy to mix up in the blender and create a healthy breakfast the whole family can enjoy.

Ingredients

  • 1 cup cottage cheese
  • 1 cup old fashioned oats
  • 2 eggs
  • 2 teaspoons baking powder
  • 1 teaspoon vanilla extract

Instructions

  • Mix all ingredients in a blender and blend until smooth.
  • Set a skillet on the stove on medium heat with non-stick cooking spray and pour batter in circles.
  • Once batter just begins to bubble up all the way across flip. The second side will cook faster than the first side. Serve warm and enjoy.
