- 1 cup cottage cheese
- 1 cup old fashioned oats
- 2 eggs
- 2 teaspoons baking powder
- 1 teaspoon vanilla extract
Mix all ingredients in a blender and blend until smooth.
Set a skillet on the stove on medium heat with non-stick cooking spray and pour batter in circles.
Once batter just begins to bubble up all the way across flip. The second side will cook faster than the first side. Serve warm and enjoy.
