Disappearing Marshmallow Brownies

These brownies can be made even more fun by using colorful mini marshmallows or Funmallows.

Marshmallow Brownies

Homemade brownies absolutely hit the spot when craving a homemade sweet treat. This is a fun recipe to bake with the kids and it’s nice to have a small batch to snack on for a few days.

Chocolate is one of our favorite dessert flavors, so mixing chocolate chips and butterscotch chips in these marshmallow brownies make a unique and memorable flavor combination. Our first brownie with this combination of baking chips is our Triple Layer Brownies. The marshmallows make this new version more kid-friendly!

My kids love marshmallows. I used to always have a bag or two of mini-marshmallows in the cupboard ready to make Chocolate & Peanut Butter Rice Crispies or Oreo Cookie Treats.

I’ve found that my kids have been sneaking marshmallows for a snack more often. So they especially love these homemade marshmallow brownies because it only uses a partial bag of marshmallows leaving some for them to snack on. Whether marshmallows disappear into these brownies or in their tummies they just seem to disappear.

This recipe calls for the mini marshmallows to be stirred into the batter where our extra Gooey Marshmallow Brownies uses a whole bag of marshmallows in the topping. Our Mississippi Mud Cake also uses marshmallows in the topping layer.

Trying new brownie recipes are a tradition in our family. We’ve made these basic Big Batch of Brownies for years, a dusting of powdered sugar makes them so pretty. Chocolate Syrup Brownies are super rich and we crave the icing on our Texas Brownies.

We love having a variety of delicious brownie recipes to choose from so when my mom shared this recipe we knew we had to share it with you. Summer cookouts, potlucks and family gatherings are the perfect place to share our variations of brownies.

How to Make Disappearing Marshmallow Brownies

  1. Line a 9 x 9 inch square baking pan with parchment paper for each brownie removal or spray with non-stick spray. Preheat oven to 350°F.
  2. Use a medium sized microwave safe bowl to melt butterscotch pieces and butter in microwave or use a double boiler to melt on the stove. Stir often and remove from the heat once melted. Allow to cool to a warm temperature.
  3. Mix together flour, sugar, baking powder, salt, vanilla and egg. Add ingredients to butterscotch mixture in saucepan or bowl; mix well.
  4. Fold in marshmallows, chocolate chips and nuts (if using), and stir until combined about 5 strokes. Spread in greased pan.
  5. Bake at 350° for 20-25 minutes. Center will be jiggly but becomes firm upon cooling. Be sure not to over bake.
  6. Once brownies are cool and firm use parchment to remove onto a cutting board and cut with a long knife to get straight cuts.

Ingredients

  • 1/2 cup butterscotch chips
  • 1/2 cup butter
  • 3/4 cup all-purpose flour
  • 1/3 cup brown sugar firmly packed
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon vanilla
  • 1 egg
  • 1 cup mini marshmallows
  • 1 cup semi-sweet chocolate chips
  • 1/4 cup chopped nuts optional

Instructions
