Unicorn Rice Krispies Treats Recipe
Little kid parties are the best! I love watching for new themes and ideas and unicorn parties and unicorn treats are really popular right now. So, I combined a couple of my favorite recipes, St. Patrick’s Day Treats and Valentine’s Day Treats to make these easy unicorn Rice Krispie treats.
We love making variations of cereal treats and my elementary aged daughter is really into the unicorn version.
The easiest two ways to make these is with pastel mini marshmallows or funmallows and marshmallow crème mixed into Rice Krispie cereal or Lucky Charms Cereal.
Adding the funmallows at the end so they still have shape and visibility really adds some magic.
The regular mini marshmallows melt with the crème to hold the cereal together where the pastel marshmallows add a pop of flavor, color and fun.
When using Lucky Charms have a kid sort the unicorn and rainbow marshmallows out to put on top to help maximize the theme.
Is using Rice Krispies I like to pick up some unicorn sprinkles and use at least half a cup (or the whole package if it’s small) on top to add color, sparkle and the all important eye appeal.
You Can Also Use Lucky Charms Cereal
When I originally created this recipe in 2018 I modified my classic recipe by using the Lucky Charms special edition cereal with Unicorns and added Funmallows for more color and flavor. At that time you had to get a special edition cereal to have more unicorns. In 2023 unicorns are so popular those marshmallows are included in every box of Lucky Charms.
After watching my family eat multiple batches I’m 100% positive that kids love these easy unicorn treats with either cereal!
In the category of things, I never thought I would say to my kids is, “Pick the unicorn and rainbow marshmallows out of the Lucky Charms to sprinkle on top.” This is a job that kids love to help with! And the special marshmallows are a lot more fun sprinkled on top than mixed in the unicorn food cereal bars.
We make snack time or a little at home party even more fun by mixing up this unicorn inspired drink to enjoy along with the treats.
Ingredients Needed:
- Rice Krispie cereal or Lucky Charms cereal – use 6 cups of Rice Krispies or 8 cups or the whole 11.5 ounce box of Lucky Charms.
- Marshmallow Crème – adds extra sweetness and makes the cereal stick together
- Regular Mini Marshmallows – have a more neutral flavor than the color puff marshmallows, so I like to blend them
- Fruity Fun or Funmallows – pastel mini marshmallows with a variety of fruit flavors in each bag make this recipe look pretty
- Butter – adds a nice richness and helps the marshmallow melt beautifully.
- Unicorn Sprinkles – are common at most grocery stores now or can be ordered online. The sprinkles really help accent the plain Crispy Rice cereal, where they’re not needed on the Lucky Charms cereal since the unicorn marshmallows are already included in each box.
How to Make Unicorn Treats
- Over medium heat melt butter in a large six-quart dutch oven.
- Once the butter starts to melt, add the marshmallow creme.
- Over low heat, stir to combine. When butter and marshmallow creme are combined add 5 ounces of regular mini marshmallows. Continue stirring.
- When the marshmallows are nearly melted remove from heat and add the cereal two to three cups at a time.
- With just a few cups left, add the Funmallows and then stir in the remaining cereal.
- Pour into a 9×13 pan or a larger lasagna pan. Wet hands and smooth out the top or pat down with the butter wrapper. Press the extra marshmallows or sprinkles on top of the sticky treats. Let cool before cutting and serving.
Step By Step Instructions
Add butter to a dutch oven over medium heat. Once butter is at least half melted add half of a small tub of marshmallow creme and stir until mostly melted.
Turn down to medium low heat or monitor closely on medium heat as marshmallows can burn easily and stick to the bottom of the pan.
Then add half a bag of regular mini white marshmallows.
Add the cereal in thirds to make mixing easier.
After adding about two thirds of the cereal take the pan off the heat and add the colorful mini marshmallows.
Stir it all up and then pour into a 9 x 13″ pan with a light coat of non-stick cooking spray.
With clean damp finger spread the cereal mixture out evenly in the pan.
Then add sprinkles and press down gently or add unicorn marshmallows and press lightly to help them stick.
Recipe Tips & Tricks:
- If using plain Rice Krispies then try to find some unicorn sprinkles to spread generously on top – we use 1/2 cup in the pictures.
- Use 8 cups of Lucky Charms or 6 cups of crispy rice cereal.
- Cookie cutters could be used to make unicorn-shaped treats – a thin layer of cereal bars is much easier to cut with a cookie cutter.
- If having half a container of marshmallow crème and half a bag of funmallows left bothers you then make a double batch or use the entire bag of funmallows in place of using any regular mini marshmallows. Or use the extra in our Marshmallow Salad.
