Triple Layer Chocolate and Butterscotch Brownies

Layers of chocolate and blonde butterscotch brownies with chocolate and butterscotch chips in the icing make a delightfully sweet and enjoyable homemade brownie!
Our family has been on a brownie kick lately. We like to make desserts to share with friends and family at special meals, potlucks or parties and we’ve been making different kinds of brownies.
These blonde homemade brownies are a new favorite!
We love layered brownies like our Gooey Marshmallow Brownies and really rich brownies like our Texas Brownies or Chocolate Syrup Brownies.
Triple Layer Brownies
The combination of rich chocolate and sweet butterscotch makes these blonde brownies super delicious! Colorful and contrasting layers make the brownies pretty! Melted chocolate and butterscotch chips on top make a nice marbled look with swirled together for the icing.
The butterscotch chips give a new dimension to this recipe that leaves you really satisfied with the chocolate and chocolate flavor combinations. I especially enjoy having a baked dessert with a lighter taste and this one fits the bill. This recipe is delicious, but it’s not overwhelming and rich like some of the dessert bars on the ship. As we cut back on indulgences these brownies are helping us enjoy dessert in smaller portions!
When we eat sweets we try to make sure and have lean meat with a side that’s primarily made of vegetables and packed with fiber like our Broccoli Cauliflower Salad, Crock Pot Cauliflower Casserole or Ranch Glazed Carrots.
Ingredients Needed
- Chocolate chips
- Butterscotch chips
- Flour
- Salt
- Butter
- Brown Sugar
- Vanilla
- Eggs
- Nuts are optional
Adding your favorite nuts are optional. We’re really on the fence about nuts in brownies. Sometimes the smooth nutless texture is nice and sometimes some extra crunch is nice.
Nuts add so much more dimension to our Loaded Banana Bars and Best All-Bran Muffins, but we typically go nut-free on these brownies.
Tips for Making Blonde Chocolate Chip Brownies
- Semi-sweet or milk chocolate chips will work, we prefer semi-sweet chips
- Peanut butter chips could be substituted for butterscotch chips to create triple layer chocolate and peanut butter brownies
- Have plenty of bowls ready
- Melt chips in the microwave or on stove stop, just remember to stir often, watch closely and keep the heat on low
- If melting chips in a pan on the stove, place in a bowl once melted to prevent burning while left in the pan
- Have all ingredients ready before melting chips
- Sprinkle chips on fairly quickly after brownies are done baking, as they soften take a butter knife and swirl the chocolate and butterscotch chips together in any pattern or design that you enjoy
How to Make Triple Layer Brownies
- Preheat oven to 350°F
- Grease a 9 x 13-inch pan
- In a small bowl combine flour, baking powder and salt; set aside.
- In a large mixing bowl combine butter, brown sugar and vanilla. Beat until creamy.
- Add eggs one at a time and beat well.
- Slowly add flour mixture, mix well. If using nuts add 1 cup of chopped nuts.
- Divide batter in half, leaving half in the larger mixing bowl
- Melt 1 cup of butterscotch chips and mix into half of the batter. Pour into a greased baking pan.
- Melt 1 cup chocolate chips and mix into the remaining half of the batter. Spread over butterscotch mixture.
- Bake for 30 – 35 minutes until a toothpick comes out clean. Be sure not to overbake brownies.
- Remove from oven and sprinkle remaining butterscotch and chocolate chips over the top. Let set until chips melt then spread like frosting.
