Buckeye Cookie Bars

No-Bake Buckeye Bars

We love the combination of chocolate and peanut butter. Our No-Bake Buckeye Bars are a favorite, so we made a spin on this idea without graham crackers and replaced them with Lorna Doone cookies.

Lay the sweet shortbread cookies out in a flat layer and spread melted peanut butter chips on the second layer. The third layer is a combination of melted semi-sweet chocolate chips and almond bark.

Only 4 ingredients make a delicious homemade chocolate cookie treat that is irresistible. This recipe is so easy my husband created and made it.

We are both Buckeyes and alumni of the Ohio State University so we have plenty of chocolate and peanut butter or Buckeye themed food like our Buckeye Cheesecake and Chocolate & Peanut Butter Bar Cookies and Chocolate & Peanut Butter Mess Cake.

The unique ingredient that makes this recipe special is the Lorna Doone Cookies. They have a rich butter flavor that adds a special twist to some of our favorite desserts like our Candy Land Dessert. Sometimes they are tricky to find, so I usually look on a really high or really low shelf at Walmart or find them randomly at CVS. Ordering is another great option.

Dessert recipes are another specialty in our family and it’s always fun to try something new. The next time we make this recipe we’re thinking of replacing the peanut butter layer with caramel to make a homemade Twix candy bar. We’ve already got a couple of homemade candy bar favorites like Pay Day Crunch and O’Henry Bars, so adding more to our recipe box just makes sense!

How to Make Buckeye Bars

  1. Line a 9 x 13 pan with foil for easy clean-up. Place a layer of Lorna Doone cookies with the flat side down tightly next to each other.
  2. Melt peanut butter chips in a microwave-safe bowl – I like to use a medium-sized glass bowl that allows room to stir. Stir every 30 seconds until melted and then spread on cookies.
  3. Allow enough time for the peanut butter layer to set up – about 15 – 30 minutes. During this time I like to wash my glass bowl so it’s ready to use for the top layer.
  4. Then melt almond bark and semi-sweet chocolate chips together in a glass bowl. Stir every 30 seconds until the chocolate is melted and spread evenly over the top. I like to use a butter knife to spread and quickly make little swirl patterns across the top of the chocolate. Move quickly as the chocolate begins to set up almost immediately.
  5. Allow the chocolate to firm up more over the next 1 to 2 hours, break in pieces and serve.

Tips for Making No-Bake Buckeye Cookies

  • Allow time to set-up in between peanut butter and chocolate layers
  • Allow more time for chocolate to set up before serving
  • We like to serve by just breaking the pieces into squares that are roughly the same size as the Lorna Doone cookies
  • If you are in a hurry this dessert sets up more quickly in the refrigerator
  • You can try to make a pattern in the melted chocolate, but since they will be eaten in small pieces it doesn’t really matter that much
  • Can be stored on the countertop in an airtight container, but if it’s very warm they will last a couple of days longer stored in the refrigerator

Ingredients

  • 35 Lorna Doone shortbread cookies
  • 10 ounces peanut butter chips
  • 4 ounces almond bark
  • 1/3 cup semi-sweet chocolate chips

Instructions

  • Line a 9×13" pan with foil and place Lorna Doone cookies in a single layer in the pan.
  • Melt peaut butter chips in a microwave safe bowl. Stir every 30 seconds until melted.
  • Spread in an even layer across the cookies. Allow melted peanut butter chips about 15 minutes to set-up
  • Melt almond bark and semi-sweet chocolate chips in a microwave safe bowl. Stir every 30 seconds until melted. Spread as evenly as possible over peanut butter layer.
  • Allow 1 to 2 hours for chocolate to set-up. Use foil to remove cookies from pan and break into bars the size of the Lorna Doone cookies to enjoy.
