Gooey Chocolate Peanut Butter Oatmeal Bars

Packed with chocolate, oatmeal, and peanut butter chips, these cookie bars have a gooey center that tastes fresh from the oven every time.

Oatmeal Peanut Butter Chocolate Chip Bars Recipe

The edges will have a traditional cookie consistency, but the center is ultra gooey when warm and tastes fresh of out the oven chewy once completely cooled.

Melted butter helps create the slightly underdone gooeyness along with generous amounts of chocolate in every bite. The balance of chocolate, peanut butter and oatmeal make these the perfect bar cookie!

A friend from our workout class at the Y shared that her family looks forward to making these rich bar cookies every year at Christmas. When I heard the genuine enthusiasm in her voice I had to ask for the recipe!

Ingredients Needed

  • Butter – unsalted
  • Creamy Peanut Butter
  • Eggs
  • Light Brown Sugar
  • Vanilla Extract
  • All-Purpose Flour
  • Old Fashioned Rolled Oats
  • Baking Soda
  • Salt
  • Chocolate Chips
  • Peanut Butter Chips
Ingredients to make gooey cookie bars are old fashioned oats, vanilla, peanut butter chips, flour, chocolate chips, eggs, butter, baking soda, salt, peanut butter and brown sugar on a wooden counter top.

Step By Step Instructions

Preheat oven to 350℉ and prepare a 9 x 13″ baking dish by lining with parchment paper or coating with non-stick cooking spray.

Melt butter and then stir in peanut butter, eggs, brown sugar and vanilla. We truly do use a full tablespoon, instead of the traditional teaspoon of pure vanilla.

Stir in the flour, oats, baking soda and salt until just combined.

Add chocolate chips and peanut butter chips.

Spread evenly in the prepared baking dish. Bake for 20 to 25 minutes. 22 minutes was the perfect amount of time for us with multiple tests in our convection oven.

Then center should be set and the edges lightly golden.

Serve warm (with napkins) or completely cooled for a different, but amazing eating experience each time.

Recipe Tips and Tricks

  • Using real butter and melting it helps contribute to the gooey texture.
  • We typically have chocolate chips on hand, but this is a great recipe to use chocolate chunks in.
  • Use a board scraper to easily cut straight lines in the pan.
  • We try to cut small bars and freeze extras for Valentine’s Day or another celebration.

Ingredients
  

  • 3/4 cup butter
  • 1 1/2 cups light brown sugar
  • 2 eggs
  • 1 tablespoon vanilla extract
  • 1/2 cup creamy peanut butter
  • 1 1/2 cups all purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup old fashioned oats
  • 1 1/4 cup semi-sweet chocolate chips
  • 3/4 cup peanut butter chips

Instructions

  • Preheat oven to 350℉. Line a 9 x 13" pan with parchment paper and coat with non-stick cooking spray.
  • Melt 3/4 cup butter, then stir in 1 1/2 cups light brown sugar, 2 eggs, 1 tablespoon vanilla extract and 1/2 cup creamy peanut butter. Mix well.
  • In a separate bowl sift together 1 1/2 cups all purpose flour, 1/2 teaspoon salt and 1 teaspoon baking soda. Then stir in 1 cup old fashioned oats.
  • Add flour mixture to the egg mixture and stir until just combined.
  • Add 1 1/4 cup semi-sweet chocolate chips and 3/4 cup peanut butter chips and fold until just combined.
  • Spread dough evenly in the prepared pan. Bake for 22 minutes. The edges will be lightly golden brown and the center should be set.
