Gooey Chocolate Peanut Butter Oatmeal Bars

Ingredients

  • 3/4 cup butter
  • 1 1/2 cups light brown sugar
  • 2 eggs
  • 1 tablespoon vanilla extract
  • 1/2 cup creamy peanut butter
  • 1 1/2 cups all purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup old fashioned oats
  • 1 1/4 cup semi-sweet chocolate chips
  • 3/4 cup peanut butter chips

Instructions

  • Preheat oven to 350℉. Line a 9 x 13" pan with parchment paper and coat with non-stick cooking spray.
  • Melt 3/4 cup butter, then stir in 1 1/2 cups light brown sugar, 2 eggs, 1 tablespoon vanilla extract and 1/2 cup creamy peanut butter. Mix well.
  • In a separate bowl sift together 1 1/2 cups all purpose flour, 1/2 teaspoon salt and 1 teaspoon baking soda. Then stir in 1 cup old fashioned oats.
  • Add flour mixture to the egg mixture and stir until just combined.
  • Add 1 1/4 cup semi-sweet chocolate chips and 3/4 cup peanut butter chips and fold until just combined.
  • Spread dough evenly in the prepared pan. Bake for 22 minutes. The edges will be lightly golden brown and the center should be set.
