Gooey Chocolate Peanut Butter Oatmeal Bars

- 3/4 cup butter
- 1 1/2 cups light brown sugar
- 2 eggs
- 1 tablespoon vanilla extract
- 1/2 cup creamy peanut butter
- 1 1/2 cups all purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup old fashioned oats
- 1 1/4 cup semi-sweet chocolate chips
- 3/4 cup peanut butter chips
Preheat oven to 350℉. Line a 9 x 13" pan with parchment paper and coat with non-stick cooking spray.
Melt 3/4 cup butter, then stir in 1 1/2 cups light brown sugar, 2 eggs, 1 tablespoon vanilla extract and 1/2 cup creamy peanut butter. Mix well.
In a separate bowl sift together 1 1/2 cups all purpose flour, 1/2 teaspoon salt and 1 teaspoon baking soda. Then stir in 1 cup old fashioned oats.
Add flour mixture to the egg mixture and stir until just combined.
Add 1 1/4 cup semi-sweet chocolate chips and 3/4 cup peanut butter chips and fold until just combined.
Spread dough evenly in the prepared pan. Bake for 22 minutes. The edges will be lightly golden brown and the center should be set.
