Chocolate Marshmallow Brownies

We love brownies and rice krispie treats and marshmallows.  This dessert is a unique yet perfect combination of all of these easy and delicious desserts!

My mom has had this recipe for years and as I was eating these dessert bars for the first time I thought this is the perfect dessert for kids.  But I really love it too.  Honestly, everyone I’ve seen eat these Gooey Marshmallow Brownies has loved them.

I have an assistant that was cheering wildly for this recipe during our photo session.  She has taught me to take pictures faster because she loves sampling everything chocolate!  Her hands kept edging closer to the pan as she was saying “Chocolate.  Chocolate. Chocolate.”  Before she even tasted the recipe she knew how to describe it 🙂

How to Keep Brownies From Falling Apart

Gooey Marshmallow Brownies slice easiest when chilled and using a serrated knife.  As the brownies get to room temperature they are more likely to crumble and begin to fall apart.

We like this recipe chilled and we like how it gets gooier as it warms up.  The perfect example of a winning recipe is that it tastes good in any situation!

Why Do Brownies Crack On Top?

This recipe is perfect because it doesn’t matter if the bottom layer of brownies is a little cracked because it’s covered up with so many delicious layers!  Stirring too much will likely cause brownies to crack.

The important tip to remember when making this recipe is not to burn the brownies.  The brownies are done when a toothpick inserted in the center comes out clean.  I work to avoid burning baked goods by subtracting a few minutes from the bake time.  We have a convection oven and that can make brownies, cakes, and cookies bake more quickly.  Since you can’t undo baking but you can always bake longer I like to check on items before I think they are done.

As soon as the toothpick comes out clean take the brownies out of the oven and sprinkle marshmallows on the hot brownies.  Return to the oven for three additional minutes.  The extra baking time is another great reason not to burn the base layer of brownies.

I’ve tried to develop a knack for pulling baked good from the oven JUST before they finish baking and letting them continue to bake on the counter.  This is a judgment thing that has to be learned and is difficult to teach.  Practice makes perfect!

Marshmallow Swirl Brownies

The top layer is very rich and has a wonderful chocolate and peanut butter flavor with a crunch.

To make the scotcharoo style topping combine chocolate chips, peanut butter and butter in a medium saucepan.  Cook on low heat stirring constantly until chips are melted.  Add rice cereal and mix well.  Spread mixture over marshmallow layer.

Some of the marshmallows rise up through the topping making random patterns or swirls in the topping that tastes so yummy!

Refrigerate until chilled.

Should the Gooey Marshmallow Brownies get transported or covered with an airtight lid before cooling down the marshmallows will bubble up through the top chocolate layer and give the dessert a marbled look.  If you take plenty of time and allow everything to cool and release steam and keep the dish level the top layer will remain an even layer of chocolate.

How to Make Gooey Marshmallow Brownies

  1. Preheat oven to 350 degrees F and grease bottom of 13 x 9-inch pan.
  2. Prepare and bake brownies following package directions for original recipe.
  3. Sprinkle marshmallows on hot brownies.  Bake for 3 minutes longer.
  4. Combine chocolate chips, peanut butter and butter in a medium saucepan.  Cook on low heat stirring constantly until chips are melted.
  5. Add rice cereal and mix well.
  6. Spread mixture over marshmallow layer.
  7. Refrigerate until chilled.  Cut into bars and enjoy!

  • 1 box family size brownie mix
  • 10 ounces mini marshmallows
  • 1 1/2 cups semi-sweet chocolate chips
  • 1 cup creamy peanut butter
  • 1 tablespoon butter
  • 1 1/2 cups crispy rice cereal
