Gooey Marshmallow Brownies

Chewy brownies with soft, sweet marshmallows topped with a rich chocolate, peanut butter layer with crispy rice cereal makes amazing Marshmallow Brownies!

Ingredients

Brownies

  • 18.3 ounces brownie mix family size
  • 2 eggs
  • 1/2 cup vegetable oil
  • 1/4 cup water

Marshmallow Layer

  • 10 ounces mini marshmallows

Chocolate Topping

  • 1 1/2 cups semi-sweet chocolate chips
  • 1 cup creamy peanut butter
  • 1 tablespoon butter
  • 1 1/2 cups crispy rice cereal

Instructions

Brownies

  • Preheat oven to 350 degrees.  Grease bottom of 13 x 9-inch pan.  Prepare and bake brownies following package directions for original recipe.  

Marshmallow Layer

  • Sprinkle marshmallows on hot brownies.  Bake for 3 minutes longer.
  • Allow marshmallows to cool for 20 - 30 minutes before adding the final layer.

Chocolate Topping

  • Combine chocolate chips, peanut butter and butter in medium sauce pan.  Cook on low heat stirring constantly until chips are melted. 
  • Add rice cereal and mix well.  Spread mixture over marshmallow layer.  Refrigerate until chilled.  Cut into bars and enjoy!
