Sour Cream Noodle Bake
Ground beef coated in tomato sauce nestles among tender noodles mixed with sour cream and cottage cheese to create this old fashioned Sour Cream Noodle Bake.

An Old Fashioned Ground Beef Casserole with Noodles
A combination of sour cream and cottage cheese gives this classic casserole a special creaminess. You taste the cream in every bite, but no single ingredient overpowers the dish.
Unlike many hamburger casseroles, this one doesn’t use a can of cream of anything soup. Simple tomato sauce ties it all together for a nice change.
Our Sour Cream and Noodle Bake is a warm, homestyle meal that hits the spot, just like our Chicken Casserole with Noodles and our Ham and Swiss Casserole, and it’s one we like to keep in our dinner rotation.

This is one of several vintage recipes from an old church cookbook that are childhood classics. A few others include Old Fashioned Caramel Cookies, Pineapple Icing, and our Ground Beef Biscuit Casserole.
Add another thick layer of cheddar cheese in the center of the casserole. It gives a stronger balance of cheddar flavor and further enhances the creamy noodles.

Ingredients Needed:
- Egg Noodles – we like wide or extra wide noodles
- Ground Beef – we like a mix that is at least 85% lean
- Onion
- Tomato Sauce – my husband likes using one can, but I’d prefer more sauce and two cans
- Sour Cream & Cottage Cheese – a mixture provides more balance while maximizing creaminess
- Cheddar Cheese – if you love cheese add a second layer in the middle of the casserole

How To Make Sour Cream Noodle Bake
Brown the ground beef and drain any excess fat. Add onions and cook until transclucent.
Stir in tomato sauce and cook until warmed through.
Follow the directions on the package to cook egg noodles. Drain and stir in sour cream and cottage cheese.

Preheat oven to 350℉ and lightly coat a 9 x 13″ or slightly smaller casserole dish with non-stick cooking spray.
Layer half of the creamy noodle mixture in the bottom. Then layer half of the saucy ground beef on top.
Repeat layers and finish with a thick layer of freshly shredded cheddar cheese.

Bake uncovered for 20 to 25 minutes until cheese is bubbly and melted and the casserole is heated through.

Jennifer’s Recipe Tips and Tricks
- If the dish needs to hold for a while before serving cover tightly with foil while baking and holding to keep the noodles moist.
- While testing this recipe several of our taste testers like the original church cookbook recipe as printed here. I would prefer doubling the tomato sauce and cheddar cheese.
- Leftover beef sour cream noodle bake reheats well. More sauce makes freezing and reheating even easier!
- A ground turkey mixture like we use in our Sloppy Jane recipe would work well as the meaty filling too!
