Old Fashioned Oat Bran Cookie Recipe

When we came across this old fashioned Oat Bran Cookies with peanut butter in an old church cookbook we knew we had to give them a try!

More chewy and earthy than a granola bar than sweet like a dessert cookie, these cookies are hearty and grainy with just the right touch of sweetness. This recipe is a nice treat to enjoy with a cup of coffee or tea while visiting with friends.

Ingredients Needed

  • Butter – use the real dairy butter for the best flavor
  • Brown Sugar and Granulated White Sugar
  • Vanilla Extract
  • Peanut Butter – creamy or chunky work fine with the grainy texture in the oats and bran
  • Eggs
  • All Purpose Flour
  • Oat Bran
  • Rolled Oats – same thing as old fashioned oats, quick oats won’t give the fullness of flavor and texture
  • Baking Soda – don’t use baking soda, there’s a difference 
Ingredients to make oat bran cookies are flour, brown sugar, granulated sugar, butter, peanut butter, eggs, vanilla, baking soda, oat bran, old fashioned oats on a wooden counter top.

Step By Step Instructions

In a medium sized mixing bowl beat softened butter until smooth.

Add brown sugar, granulated sugar, vanilla, peanut butter and eggs. Mix well.

Smooth and creamy peanut butter cookie dough.

In a separate bowl stir together flour, oat bran, rolled oats, and baking soda.

Oat bran, old fashioned oats and all purpose flour in a white mixing bowl.

Add 1/4 to 1/3 of the dry mixture to the butter mixture at a time. Scrape the edges and bottom of the bowl between each addition.

Cookie dough will be sticky.

Oatmeal and oat bran stirred into cookie dough.

Drop by teaspoon or cookie scoop onto an ungreased or lined baking sheet.

Bake in an oven preheated to 350℉ for 15 to 18 minutes.

Lightly golden brown oat and bran cookies warm out of the oven on a lined baking sheet.

Let cool for a few minutes to allow the peanut butter oat bran cookies to firm up before serving.

Ingredients
  

  • 1 cup butter softened
  • 3/4 cup brown sugar
  • 3/4 cup granulated sugar
  • 1 teaspoon vanilla
  • 1 cup peanut butter creamy
  • 2 eggs beaten
  • 1 1/4 cups all-purpose flour
  • 2 teaspoons baking soda
  • 1 cup oat bran
  • 3/4 cup rolled oats

Instructions

  • Beat butter, brown sugar and white sugar together.
    1 cup butter, 3/4 cup brown sugar, 3/4 cup granulated sugar
  • Add vanilla and peanut butter and beat for 3 minutes.
    1 teaspoon vanilla, 1 cup peanut butter
  • Add eggs, mix well.
    2 eggs
  • In a separate bowl combine the flour, bran, oats and baking soda.
    1 1/4 cups all-purpose flour, 2 teaspoons baking soda, 1 cup oat bran, 3/4 cup rolled oats
  • Add dry ingredients into the butter mixture.
  • Drop by teaspoon full onto an ungreased cookie sheet.
  • Bake at 350℉ for 9 to 11 minutes. Cool on a wire rack before serving.
