Add shredded cheddar cheese and fold into the batter.

Generously grease a muffin tin. Carefully fill ten of the spaces half full.

Chop the uncooked hot dogs into bite sized pieces and place 4 to 5 pieces into each tin with batter.

Gently press down into the batter so that most of the hot dog will still be exposed to the heat.

Bake for 15 – 18 minutes until a toothpick inserted in the center of a muffin comes out clean.

Serve warm and enjoy!

We found that these hot dog corn muffins have the best eye appeal, flavor, and cook the most evenly when small pieces of hot dog are added to the top of the batter in the muffin tin just before baking.

We also tested mixing the hot dogs directly into the batter and layering the batter and hot dogs in the muffin tin. Both methods worked, but the muffins didn’t look as appealing, and the hot dogs didn’t develop the same browned, flavorful finish they get when baked on top.
