We eat a lot of hamburgers and lunch meat sandwiches in our family and these crockpot loaded red potatoes are the perfect easy potato dish to go with several meals.
We love using our slow cooker for easy potato side dishes like this. While we often enjoy this as an easy recipe for casual family meals, it would be great to take to big holiday meals as well!

Crock Pot Loaded Potatoes
Sometimes I like to eat potatoes with my bacon and sometimes I just like to eat the bacon! Regardless of your chosen bacon to potato ratio don’t forget the cheese!
If you’ve looked at many recipes on here you might’ve noticed that topping potatoes with bacon and cheese is one of our favorite things to do. Our favorite cheese to melt on potatoes is cheddar cheese. And I love sharp cheddar. There’s so much more rich, full flavor in sharp cheeses when mixing them in a dish like this. The ranch seasoning mix was a great touch too. We love making a few pounds of bacon at a time to have on hand just for recipes like this!
We also enjoy adding chives or green onions. My mother-in-law gave me this recipe and it calls for chives, but the grocery store was out, so I substituted chives for green onions. Either option works fine!
Loaded Red Potatoes in the Slow Cooker
The first time we made these potatoes was to take to a summer cookout. They were the perfect easy side dish to bring along because we never know exactly what time we will eat. The kids love playing and swimming, so the crock pot holds these potatoes perfectly on the keep warm setting for a couple hours if needed.
We made the full-size batch in our 5-quart slow cooker, but if we had a 6 quart I would’ve added more of each ingredient because the leftovers were great to go with lunches throughout the week!
This recipe will be perfect for Thanksgiving, Christmas or Easter dinner too! It’s fairly easy to make and people always want the recipe because of the delicious blend of flavors!
How to Make Slow Cooker Cheesy Bacon Potatoes
- Line crock pot with foil or liner for easy clean up. Coat with nonstick spray.
- Place layer of potatoes in crock, top with 1/3 cheese, 1/3 ranch and 1/3 bacon. Repeat 2 times.
- Cook on high 3-4 hours or low 7-8 hours. Sprinkle with cheese when done and garnish with green onions or chives.
Tips for Making Slow Cooker Loaded Potato Casserole
- Cut potatoes into equally sized pieces
- Small bite-sized pieces are easiest to eat
- We prefer crumbling whole slices of bacon, but pre-cooked bacon bits will work too
- Stir once or twice during cooking to prevent sticking to the sides, just be careful not to turn the cheese and toppings to the very bottom of the crock
- If left on keep warm at a party stir occasionally to prevent the edges from burning
- All cooking appliances and conditions are different, so you should test these times and guidelines first in your own appliance to determine what adjustments may be needed!
