Air Fryer Roasted Mushrooms

Mushrooms marinated in balsamic vinegar, soy sauce and fresh garlic then roasted in the air fryer are tender and delicious!

Air Fryer Roasted Mushrooms are an easy side dish that goes great with steak, pork chops and chicken.

Air Fryer Mushrooms

Fresh garlic tastes great on so many vegetables. Add some soy sauce and balsamic vinegar for an Asian inspired marinade that gives a flavor burst in every bite. These are the type of easy vegetable recipes that our family enjoys cooking.

Our family LOVES mushrooms mixed in our meals like in Country Style Ribs with Mushroom Gravy and Stew Meat and Mushrooms in Wine Sauce, as a side dish and as an appetizer like Crock Pot Stuffed Mushrooms. We just crave more mushrooms.

We have a Cuisinart Air Fryer & Toaster Oven and have been loving Air Fryer Broccoli, but realized we had never made mushrooms in it. These mushrooms are so juicy we just can’t stop eating them!

Our air fryer toaster oven is really growing on me. It heats up and cooks small batches of vegetables so must faster than a regular oven. These mushrooms could easily be roasted in the oven if you don’t have an air fryer, but our new little device just saves time.

All too often we don’t start cooking until we’re hungry. My husband is a farmer and I work from home full-time, so it’s easy to get wrapped up in work and push through one more chore or task. Once we get to the kitchen we’re ready to eat immediately. So using the air fryer to virtually eliminate preheat time on the oven is a big deal when you’re hungry!

Garlic Roasted Mushrooms

Cooked mushrooms are a favorite with grilled meat like our Farmhouse Pork Chops and meats cooked inside like our Instant Pot Mozzarella Chicken. Anytime we can add a delicious fresh vegetable to our plate and eat more fiber that actually tastes good it makes us happy!

Taking inspiration from our Asian Marinated Asparagus we created an Air Fryer Asparagus and then a similar marinade for whole mushrooms and added a few ingredients. My husband eats them plain as an appetizer. There’s a chance he likes them so much he’s eaten almost an entire batch.

After making an 8 ounce package of mushrooms and realizing it wouldn’t go very far in our family we’ve always made a 16 ounce package since.

Sometimes I find mushrooms marked down at the grocery store or I find a package in our fridge that somehow got pushed to the back that needs used quickly. This is a great way to use and enjoy extra mushrooms.

The garlic flavor tastes so good in our Turkey Wraps. When the current “stay-at-home” order is lifted we look forward to having friends over and offering a few appetizers. Fiesta Sausage Dip would be a wonderful compliment to these roasted mushrooms with garlic.

Tips for Making Air Fryer Mushrooms

  • Use small uniform mushrooms
  • Cut larger mushrooms in half or in quarters so they are a similar size to cook more evenly
  • We prefer white mushrooms for the milder flavor to Bella mushrooms for this recipe, but both can work
  • Fresh garlic really makes this recipe successful, but granulated garlic can be used if that’s all you have
  • Marinate for at least an hour, but all day works fine too – discard marinade when done
  • When the aroma is wonderful and the mushrooms begin to shrivel that is another indication that the mushrooms are ready to eat

How to Roast Mushrooms in the Air Fryer

Place all marinade ingredients in a bag and allow mushrooms to marinate for at least an hour.

Cover solid air fryer tray tightly in foil to make clean up easier. Place mushrooms in basket and set on solid tray that comes with some machines as the mushrooms will purge some marinade as they roast.

Set on 350 degrees F. Air Fry for 10 minutes.

Shake basket once during roasting. As mushrooms roast they will begin to shrivel up slightly. The aroma is amazing and when it peaks mushrooms are typically done roasting too.

Air Fryer Roasted Mushrooms

Ingredients
  

  • 16 ounces white mushrooms
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon soy sauce
  • 5 cloves garlic freshly minced
  • 1/2 teaspoon pepper freshly ground
  • 1 teaspoon koshor salt
  • 1 teaspoon dried parsley

Instructions
 

  • Place marinade ingredients in a gallon sized self sealing bag and mix together.
  • Add clean mushrooms to the bag and seal. Marinade for 1 – 8 hours.
  • Set air fryer to 350°F and air fry for 10 minutes. Stir or shake tray once during cooking time.
