Buckeye Graham Cracker Bars

Peanut Butter Chocolate Bars On Graham Crackers

Inspired by a combination of a trending recipe and our classic Buckeye Bars, everything old is new again. We adjusted the creamy peanut butter filling to create a mixture that’s easier to spread on the graham crackers and drizzled with a few melted pb chips on top for more eye appeal.

Just in time to cheer on our beloved Ohio State Buckeyes in the National Championship (or for Valentine’s day) these crunchy, creamy and chocolatey graham cracker treats are amazing.

Ingredients Needed:

  • HONEY Graham Crackers – we love store brand, but splurging for the Honey Maid Graham crackers is worth it here!
  • Creamy Peanut Butter
  • Powdered Sugar
  • Butter – use real butter for maximum flavor!
  • Chocolate Chips – for extra sweetness try milk chocolate, for a slightly more mellow flavor use semi-sweet chips. Our testing team is split on the best option.
  • Peanut Butter Chips – just a few make the treat more aesthetic – you can drizzle or write a message if you please.
  • Vegetable Oil – optional, helps the chocolate melt and pour more smoothly.
Ingredients needed to make buckeye graham cracker bars are chocolate chips, creamy peanut butter, powdered sugar, butter, peanut butter chips and honey graham crackers on a wooden counter top.

Step By Step Instructions

Line a square pan with square corners with waxed paper or parchment paper.

Break longer rectangular graham crackers in half to create pieces that are more square.

Arrange the crackers in a single layer in the bottom. Since the crackers aren’t perfectly square you may need to make a few smaller rectangles to fill in the pan.

These Buckeye Cracker Bars are easier to make if the crackers are tightly fitting.

In a small mixing bowl mix softened or partially melted butter in with the powdered sugar and creamy peanut butter.

Beat until smooth.

Carefully spread over the graham crackers in as even of a layer as possible.

In a small microwave safe dish melt chocolate with vegetable oil (1 cup of chocolate to 1 teaspoon of oil ratio). Stir every 20 to 30 seconds until smooth.

Pour over peanut butter mixture and smooth out immediately with a butter knife, silicone spatula and finish by tapping on a hard surface until smooth.

Repeat with the peanut butter chips and oil. Use a teaspoon to drizzle over the top in lines or in a pattern of your choice.

***PRO TIP – Holding opposite corners of the waxed paper lift out of the pan and set on a flat surface.

Ingredients
  

  • 5 honey graham crackers full rectangle crackers

Peanut Butter Filling

  • 1/2 cup butter softened
  • 1/2 cup creamy peanut butter
  • 3/4 cup powdered sugar

Chocolate Topping

  • 1 cup milk chocolate chips
  • 1 1/2 teaspoon vegetable oil optional, divided
  • 1/4 cup peanut butter chips

Instructions
 

  • Line a square pan with square corners with waxed paper and lay a single layer of honey graham crackers in the bottom. We like to keep graham crackers in squares, but may need to break some down into smaller rectangles to tightly fit in the pan.

Peanut Butter Filling

  • Stir together very soft or partially melted butter with peanut butter and powdered sugar.
  • Carefully spread over top of graham crackers taking care to keep the crackers in a single layer.

Chocolate Topping

  • Melt one cup of chocolate chips with 1 teaspoon of vegetable oil according to directions on package. Stir often and pour over peanut butter mixture as soon as chocolate is smooth.
  • Melt peanut butter chip with 1/2 teaspoon of oil, stirring often and use a teaspoon to drizzle over the top.
  • Let chocolate set-up. Holding opposite corners of the waxed paper remove the bars from the pan, break apart and enjoy!
