A One Skillet Mexican Beef and Rice Recipe

Using just one pot, brown the beef and coat with taco seasoning. Then add flavorful beef broth and tomatoes with juice to cook the rice until tender. Add a thick layer of cheddar or Mexican blend cheese.

Garnish with lettuce, sour cream, avocado and your favorite taco toppings for a complete meal that’s ready in under 30 minutes.

This one pot taco beef skillet is a recipe the kids ask for repeatedly. We like to mix it in the dinner rotation with Beef and Noodle Skillet and Cheesy Ground Beef and Tortellini.

Ingredients Needed

  • Ground beef
  • Onion – we like yellow, white or sweet
  • Taco seasoning
  • Diced tomatoes – a can of petite blends in more easily
  • Beef Broth – fills the rice with more flavor than water alone
  • Rice – we use medium grain white rice
  • Cheese – we like to use a block of cheddar cheese and shred over top of the skillet. Mexican or colby jack cheese also work well.
  • Taco Toppings – sour cream, more chopped tomatoes, shredded lettuce, avocado or whatever you enjoy!
Ingredients to make a Mexican beef rice skillet are ground beef, petite diced tomatoes, beef broth, onion, taco seasoning, sour cream, rice, lettuce and cheddar cheese on a wooden counter top.

How To Make A Taco Rice Skillet Meal

In a deep skillet set to medium high heat brown the ground beef and drain well. Add chopped onions and cook until tender and translucent.

Sprinkle taco seasoning over the meat and stir well.

Do not drain the can of tomatoes as the juice is need to help the rice cook. Pour broth and tomatoes in the skillet.

Rinse rice under cold water and pour raw rice into the skillet.

Stir well. Turn the heat down to simmer. Cover and cook for 20 to 25 minutes until the rice is fully cooked and ready to eat.

Take a test bite before serving.

Shred cheese over the skillet and serve immediately after it melts with taco toppings of your choice.

Recipe Tips and Tricks

  • 1 ounce packet of taco seasoning is equal to 4 tablespoons or 1/4 cup of seasoning.
  • Use fire roasted tomatoes like we do in One Skillet Kielbasa and Rice and Cajun Sausage Pasta for a different flavor profile.
  • We tested cooking the rice in tomato juice and far prefer the flavor of rice cooked in beef broth.
  • Leftovers from our Mexican beef rice skillet meal freeze well. We like to reheat and serve with as salad topping or bake in crunchy taco shells.

Ingredients
  

  • 1 pound ground beef
  • 1 medium onion chopped
  • 1 ounce taco seasoning
  • 14 ounce can petite diced tomatoes undrained
  • 2 1/4 cup beef broth
  • 1 cup rice rinsed
  • 1 cup cheddar cheese use a block and shred for best melting
  • 1 cup lettuce shredded
  • 1/4 cup sour cream

Instructions

  • Brown ground beef in a large, deep skillet over medium high heat. Drain excess fat.
    1 pound ground beef
  • Add onion and cook until transclucent.
    1 medium onion
  • Sprinkle taco seasoning over the meat and stir.
    1 ounce taco seasoning
  • Add beef broth and undrained can of tomatoes with juice. Stir well.
    14 ounce can petite diced tomatoes, 2 1/4 cup beef broth
  • Rinse rice and stir into the skillet. Mix well.
    1 cup rice
  • Cover and turn down to simmer for 20 to 25 minutes until rice is tender.
  • Sprinkle shredded cheese over the top of the skillet and cover until melted.
    1 cup cheddar cheese
  • Serve with sour cream and shredded lettuce. Enjoy!
