Easy Earthquake Cake

With cracks on the surface and an uneven finish, Earthquake Cake is made from layers of pecans, coconut, German chocolate cake mix and a cream cheese mixture.

A Cracked And Ugly Cake That Tastes Great

The cream cheese layer is like a simple frosting that’s baked on top of the chocolate cake. Nuts and coconut are accent flavors that add a nice texture to the base of German cake mix.

Earthquake cake tastes great warm out of the oven and is enjoyable at room temperature too.

Ingredients Needed

  • German Chocolate Cake Mix
  • Cake batter ingredients on the box – water, vegetable oil, eggs
  • Chopped pecans
  • Flaked coconut
  • Cream cheese
  • Butter
  • Powdered sugar
  • Vanilla extract
Ingredients to make earthquake cake are vegetable oil, coconut, pecans, cream cheese, butter, powdered sugar, German chocolate cake mix and eggs on a wooden counter top.

How To Make Earthquake Cake

Sprinkle chopped pecans in an even layer in the bottom of a lightly greased 9 x 13″ cake pan. Repeat with coconut.

Mix up the cake mix according to the directions on the package. Carefully spoon over the base layers.

In a separate mixing bowl beat together softened cream cheese, butter, powdered sugar and vanilla.

Carefully spoon over the cake batter and take care when spreading out.

Bake at 350℉ for 35 to 45 minutes until a toothpick inserted in the center comes out clean.

Tips For Success

  • Take care not to disturb the layers while spooning and spreading the next one on top.
  • You can mix in other flavors by using a different cake mix or sprinkling chocolate or peanut butter chips on top right after removing the cake from the oven.
Fork in a piece of of moist German cake mix with nuts, coconut and a cream cheese topping on a stack of white plates.

Ingredients
  

  • 13.25 ounce box German chocolate cake mix
  • 1 cup water
  • 1/2 cup vegetable oil
  • 3 eggs
  • 1 cup pecans chopped
  • 1 cup coconut
  • 8 ounces cream cheese softened
  • 1/2 cup butter melted
  • 2 cups powdered sugar
  • 1 tablespoon vanilla extract

Instructions

  • Preheat oven to 350℉ and coat a 9 x 13" pan with non-stick cooking spray.
  • Sprinkle pecans and coconut on the bottom of the pan.
    1 cup pecans, 1 cup coconut
  • Mix cake mix according to the directions on the box using water, oil and eggs. Spoon over pecans and coconut.

  • In a separate medium sized bowl beat cream cheese. Then stir in melted butter.
    8 ounces cream cheese, 1/2 cup butter
  • Stir in powdered sugar and vanilla until mixed well. Spoon over batter.
    2 cups powdered sugar, 1 tablespoon vanilla extract
  • Bake for 45 minutes or until a toothpick inserted in the center comes out clean. Cake will be cracked and ugly, but will taste delicious!
