A friend from my workout class originally shared this recipe and this Zucchini Sausage Bake with me as a simple way to add more protein to my meals and stay satisfied. With wholesome ingredients and plenty of protein, it has become a favorite nutrient-dense meal.

The eggs can be lightly scrambled right in the skillet or left to cook sunny-side up, depending on your preference. My kids love the scrambled version, especially with a drizzle of maple syrup over the sausage and sweet potato hash.

Ingredients Needed

  • Italian Sausage – we have a homemade sausage recipe that is popular, but any type of sausage, including smoked sausage can work well in this dish.
  • Sweet Potatoes – two medium potatoes makes 4 cups of 1/2″ cubes.
  • Seasonings – toss the cubed potatoes in olive oil, salt and pepper.
  • Eggs – add as many eggs as you’d like as long as there’s room in the pan.
  • Mix-Ins – chopped onion and minced garlic deepen the flavors.
  • Garnish – freshly shredded cheddar cheese and a few slices of green onions are the basic toppings. Sliced of avocado replace green onion when we want a heartier meal with veggies.
Ingredients to make sausage sweet potato hash are sweet potatoes, green onions, minced garlic, sea salt, olive oil, eggs, Italian sausage, onion and cheddar cheese on a wooden counter top.

Roasting sweet potato cubes in the air fryer or oven can make cooking the skillet itself quicker, but it adds extra cooking time overall and creates more dishes to wash.

Using leftover roasted sweet potatoes is another easy option, but you can also cook the sweet potatoes directly in the skillet for a simple one pan meal.

Save Time Cubing Sweet Potatoes

My hair dresser shared one of her best kitchen hacks is using a food chopper to cube sweet potatoes. This tip is the secret to making small, equally sized cubes that make skillet preparation possible.

How to Make Sweet Potato Sausage Hash

Using a large, deep skillet brown sausage over medium high heat. The sausage is done cooking when it is fully crumbled and there is no more pink remaining.

Scoop sausage onto a paper towel lined plate. Do not pour the skillet because retaining 1 to 2 tablespoons of drippings is key to cooking the potatoes.

While the sausage is cooking prepare small cubes of sweet potatoes.

Use a mixing bowl to coat the diced sweet potatoes with olive oil, salt and pepper. Stir to coat evenly. Then turn the skillet down to medium heat and stir potatoes into sausage drippings.

Stir potatoes once or twice over the 8 minutes while they cook. If the skillet gets dry it may be necessary to add 1 to 2 tablespoons of additional olive oil.

After 8 to 10 minutes add chopped onion and minced garlic and cook for another 2 to 3 minutes until they become translucent.

Once the potatoes are nearly tender or about 80% of the way cooked add sausage back to the skillet and stir.

Make four spots or wells where an egg can be cracked and cook directly on the skillet. Add eggs, one at a time.

Lightly scramble eggs with a fork if desired, or leave whole.

Cover and cook over low heat for another 5 to 8 minutes or until the eggs are cooked to your desired doneness.

Shred a little cheddar cheese on top and then garnish with slices of green onion.

Serve warm right out of the skillet and enjoy!

Jennifer’s Recipe Tips and Tricks

  • The biggest variables in this sweet potato and sausage hash recipe are the amount of fat in different brands of sausage and the size of the sweet potatoes.
  • A little fat is keep to sautéing small cubes of sweet potatoes well without burning.
  • Watch closely that the skillet doesn’t dry out and only add a small amount of olive oil at a time. Too much oil will create soggy potatoes.
  • Avoid adding water to the skillet as we learned in testing that it will smoke and make the potatoes very mushy.
  • Freshly shredded cheese melts smoothly where pre shredded cheese will maintain it’s matchstick form because of the anti-caking agents that are used.

Ingredients
  

  • 1 pound Italian sausage
  • 1/2 cup onion chopped
  • 1 tablespoons garlic minced
  • 4 cups sweet potatoes cubed
  • 4 eggs
  • 1/2 cup cheddar cheese shredded
  • 1 tablespoon olive oil
  • 1 teaspoon sea salt
  • 1/4 teaspoon black pepper
  • 2 green onions sliced

Instructions

  • Cook and crumble sausage in a deep skillet. Set sausage aside on a paper towel lined plate and keep 1 to 2 tablespoons of drippings in the skillet.

  • Peel and chop sweet potato into 1/2" cubes. In a mixing bowl toss cubes in olive oil, salt and pepper.
    4 cups sweet potatoes, 1 tablespoon olive oil, 1 teaspoon sea salt, 1/4 teaspoon black pepper
  • Pour into skillet with sausage drippings. Set to heat to medium, cover and cook for 8 to 10 minutes. Stir once or twice.
  • Add chopped onion and minced garlic. Saute until translucent in about 2 to 3 minutes.
    1/2 cup onion, 1 tablespoons garlic
  • Return cooked sausage to the skillet and stir well. Make 4 wells or spots for the eggs.
  • Crack one egg into each well. Cover and cook on low heat for 5 to 8 minutes until eggs are set.

  • Sprinkle with shredded cheese, garnish with sliced green onions and serve warm right out of the skillet.
