My mom made many meals like this while I was growing up to help fuel the hard manual labor we did all year around on the farm. While many of our jobs have become more mechanized there’s still plenty of labor, just like on Amish farms. Hard work and good food have always gone hand in hand.

Ingredients Needed To Make Poor Man’s Steak
Steaks
- Hamburger – 85% or leaner ground beef
- Onion – yellow, or whatever you have on hand is fine
- Milk
- Bread crumbs – crushed saltine crackers are a popular substitute
- Seasoned salt
Browning In A Skillet
- Flour seasoned with salt and pepper
- Butter – keep some extra handy and add a pat if the skillet dries, this will keep full flavor in the browned steaks
Gravy
- Cream of mushroom soup & a little water to dilute enough to spread over the whole pan. Adding a full can of water will make the steaks float in a thin gravy.

How To Make Hamburger Steak In The Oven
Add raw ground beef to a large mixing. Sprinkle bread crumbs, seasoned salt and chopped onion over the top. Add milk and mix well.
Using clean hands is the easiest and most efficient way to thoroughly mix the ingredients.


Pat into a 15″ jelly roll pan. Cover tightly with foil and refrigerate until the meat is chilled through (at least four hours) up to 24 hours.
A jelly roll pan is slightly bigger than the 9 x 13″ pan the hamburger steaks will bake in, but they will shrink just a bit during the the browning process in the skillet. Then we could easily tuck the steaks into the 9 x 13″ pan to bake in the oven.


Once chilled cut the flat hamburger mixture into square steaks.
Brown the Steaks Before Baking
Set up a station with a skillet and stick of butter that’s cut into slices.
Have a dish that’s just give enough to coat the steaks. Season the flour with salt and pepper.

Heat the skillet to medium high heat and melt a tablespoon of butter.
Add as many flour coated hamburger steaks as will fit. Once the first side is brown, flip and brown the other side.


Then arrange in a clean 9 x 13″ dish with higher sides that can hold the gravy.
Mix the can of cream of mushroom soup with just enough water to pour over the top of the steaks.
Avoid using extra water.


Cover tightly with foil and bake in an oven preheated to 350℉ for 1 hour. When the baked hamburger steaks with gravy reach an internal temperature of 160℉ they are ready to enjoy!
Jennifer’s Recipe Tips and Tricks
- Have to chill over night so the hamburgers can be cut into steaks and fried or browned in a skillet before baking. The ground beef will soften during the mixing and flattening process and will not hold it’s shape well, so chilling for at least 4 hours is an essential step.
- Use lean ground beef to keep the hamburger steaks from floating in grease. Through testing in our home kitchen we learned that the grease and gravy can mix making it difficult to drain while keeping the full flavor.
- Leftovers freeze and reheat well!

Poor Man’s Steak
Ingredients
Steaks
- 2 pounds hamburger
- 1 cup onion chopped
- 2/3 cup milk
- 2/3 cup bread crumbs or saltine crackers
- 2 teaspoons seasoned salt
Brown in a Skillet
- 1/2 cup flour
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 2 tablespoons butter
Gravy
- 10.5 ounce can cream of mushroom soup
- 2 tablespoons water
Instructions
Steaks
- Coat a 10 x 15" or slightly smaller rimmed baking sheet with non-stick baking spray.
- Mix together ground beef, onion, bread crumbs, seasoned salt and milk. Mix well.2 pounds hamburger, 1 cup onion, 2/3 cup milk, 2/3 cup bread crumbs, 2 teaspoons seasoned salt
- Press onto the baking sheet and cover tightly with plastic wrap. Refrigerate overnight.
Brown in a Skillet
- Cut hamburger mixture into squares.
- Mix together flour, salt, and pepper. Coat each side1/2 cup flour, 1 teaspoon salt, 1/2 teaspoon pepper
- Warm a skillet to medium-high heat. Add a pat of butter as you brown each side of each meat patty in batches.2 tablespoons butter
- After browning arrange in a clean 9 x 13" baking dish.
Gravy
- Mix together cream of mushroom soup and water. Pour over meat. Cover tightly with foil and bake in an oven preheated to 350℉ for 1 hour or until meat reaches a safe internal temperature of 160℉.10.5 ounce can cream of mushroom soup, 2 tablespoons water
