Mexican Ground Beef Casserole

My mom has made this Easy Mexican Style Casserole with ground beef many times over the years for our family. We like it because it has a really good flavor, but only a few ingredients.

Ground beef, noodles, tomato sauce, onion, cheddar cheese, green pepper and a bread crumb and butter topping come toghether to make a recipe that the kids will eat without complaining!  I love that these are easy ingredients that we pretty well always have on hand.

A friend just texted me a meme last night that said “Tuesday’s verion of what will they eat tonight without yelling?”  I can relate and I need to send her this recipe!

The original recipe calls for 2 tablespoons of pimento and 1/4 cup of chili sauce, but we always leave that out because we don’t like to live that wild here at our house!

New Casserole Idea with Ground Beef

My family has always raised animals on our farm.  We love steaks and roasts, but there’s still a lot of good smaller pieces of meat that makes excellent ground beef.  We love hamburgers and casseroles to use the meat that we raise on our farm.  This casserole is delicious!  I had some taco flavored cheese that I added because it felt like a good day to add more cheese.  These are the types of dish that you use what you have on hand.

I love using my basic Pyrex baking dish with the lid.  Having the lid saves so much foil and plastic wrap and it stays put so much better!  Another benefit of a casserole dish with a lid is that you can stack other stuff on top of it in the refrigerator.  We love casseroles like this that we can easily reheat leftovers later in the week.

How to Make Mexican Casserole with Ground Beef

  1. Brown ground beef, season with salt.  Add onions while ground beef is cooking so onions soften.  Drain fat from ground beef.
  2. Cook noodles.
  3. Preheat oven to 350 degrees Fahrenheit.  Lightly coat 9×13 inch casserole dish with non-stick cooking spray.
  4. Use a mixing bowl and combine the ground beef mixture, cooked noodles, cheese, water, tomato soup and pepper.
  5. In a separate microwave safe bowl melt butter and stir in breadcrumbs.  Sprinkle evenly over top of casserole.
  6. Bake for 35 – 45 minutes until breadcrumb mixture is browned.

Ingredients

  • 1 1/2 pounds ground beef
  • 1/2 teaspoon salt

  • 2 cans tomato soup
  • 1 cup water
  • 1/3 green pepper diced

Topping

  • 1 1/4 cup bread crumbs
