Easy Mexican Casserole
Egg noodles coated in a flavorful tomato sauce and taco-seasoned ground beef, layered with cheese and topped with buttery breadcrumbs create our hearty Mexican casserole.

Mexican Ground Beef Casserole
My mom has made this Easy Mexican Style Casserole with ground beef many times over the years for our family. We like it because it has a really good flavor, but only a few ingredients.
It’s a nice blend of flavors that you expect to find in dishes at a Mexican restaurant and a unique twist on our more common Hamburger Noodle Casserole.

I love using my basic Pyrex baking dish with the lid. Having the lid saves so much foil and plastic wrap and it stays put so much better! Another benefit of a casserole dish with a lid is that you can stack other stuff on top of it in the refrigerator. We love casseroles like this that we can easily reheat leftovers later in the week.

Ingredients Needed
- Meaty Mixture – Lean ground beef, we like 85% lean or leaner, onion, taco seasoning and water.
- Sauce – Chili sauce, tomato soup, green pepper, pimentos.
- Noodles -Wide egg noodles hold the most flavor.
- Cheese – Mexican cheese is our favorite, but sharp cheddar works well too.
- Bread Crumb Topping – Plain bread crumbs are stirred into melted butter and baked on top to add some extra flavor.

Step By Step Instructions
- Brown ground beef. Drain well.
- Add water, taco seasoning and onions; cook until onions soften.
- Cook noodles.
- Prepare a 9×13 dish and preheat oven to 350℉.
- Add pimentos, green pepper and chili sauce to the beef mixture.


- Then stir in tomato soup and cooked noodles.
- Pour beef mixture into the baking dish.


- Sprinkle cheese on top.
- In a small bowl melt butter and stir in breadcrumbs. Sprinkle evenly over top of casserole.


- Bake uncovered for 35 – 45 minutes until breadcrumb mixture is browned.

Easy Mexican Casserole
Ingredients
- 2 pounds ground beef
- 1 1/2 cups onion diced
- 1 ounce packet taco seasoning
- 1 cup water
- 1/4 cup chili sauce
- 2 tablespoons pimentos
- 1/3 green pepper diced
- 8 ounces noodles
- 2 10.5 ounce cans tomato soup
- 2 cups Mexican cheese
Topping
- 1 1/2 cup bread crumbs
- 4 tablespoons butter melted
Instructions
- Preheat oven to 350℉. Lightly coat 9×13 inch casserole dish with non-stick cooking spray.
- Cook noodles and set aside. Stir in a little butter if they will wait very long.8 ounces noodles
- Brown ground beef and drain.2 pounds ground beef
- Add taco seasoning, water and onion. Stir well. Allow onions to soften.1 1/2 cups onion, 1 ounce packet taco seasoning, 1 cup water
- Stir in green pepper, chili sauce and pimentos.1/4 cup chili sauce, 2 tablespoons pimentos, 1/3 green pepper
- Add undiluted tomato soup and cooked noodles, stir again.2 10.5 ounce cans tomato soup
- Spread the ground beef mixture in the bottom of a 9 x 13" glass casserole dish.
- Sprinkle cheese evenly on top.2 cups Mexican cheese
- In a separate microwave safe bowl melt butter and stir in breadcrumbs. Sprinkle evenly over top of casserole.4 tablespoons butter, 1 1/2 cup bread crumbs
- Bake for 35 – 45 minutes until breadcrumb mixture is browned and casserole is warmed through to the center.
